These zucchini breads are good, even without a lot of sugar! The breads are soft, moist, and full of flavor. They also are loaded with fiber and nutrients. The breads are great if you're on a diabetic diet or want to "eat healthy." Rather than refined sugar or artificial sweeteners, the breads get their light sweetness from a little orange juice, date puree (it's easy--see https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar ), and sweet spices. You can include raisins in the batter for a little extra sweetness, if you like (I do!). Or try the breads with dark chocolate chips instead of the raisins. The breads take minutes to mix up and air fry in about 30 minutes. We like slices of the breads for breakfast, as a snack with a cup of tea or coffee, and as a simple dessert. Enjoy!
Low Sugar Air Fryer Mini Zucchini Breads (Diabetic Friendly) -- Makes 4 Mini Loaves
1/3 cup of canola oil
1/3 cup of milk
1/3 cup of orange juice
1 large egg
1 teaspoon of vanilla
2 cups of shredded zucchini
1 cup of white whole-wheat flour
1 teaspoon of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of quick oats
1/2 teaspoon of nutmeg
1/4 teaspoon of allspice
1 teaspoon of cinnamon
1/2 cup of chopped pecans or walnuts
3 - 4 tablespoons of raisins, optional
Spritz four mini loaf pans well with non-stick cooking spray and set them aside. In a large bowl whisk together well the oil, milk, orange juice, egg, and vanilla. Stir in the shredded zucchini. Add to the bowl the flour, baking powder, baking soda, salt, quick oats, and spices and mix them into the wet ingredients until just blended. Stir in the nuts and raisins, if you're using them. Divide the batter evenly among the mini loaf pans. Air fry the breads at 320 degrees for about 30 minutes or until golden brown and a pick inserted in the middle of a loaf comes out with no wet batter attached. Let the breads cool in their pans for 10-15 minutes before removing them to cool completely. The breads will slice more easily after they've cooled, but they will taste great warm, if you can't wait for a pretty slice!
