Yes, these are low sugar, reduced carbohydrate cookies that actually taste great! Rather than artificial sweeteners (or expensive stevia, monkfruit, etc.), the cookies are sweetened with date paste/puree, which you can make yourself in minutes using dates and water. The cookies are soft and squishy, and, although not very sweet, they are satisfying. Think of deep dark chocolate cake scattered with chocolate chips, only in cookie form. The recipe makes only a small batch of cookies (limiting temptation!), and I usually make the cookies in the air fryer. If you'd like to bake the cookies in a regular oven, bake them for about 15 minutes at 350. The cookies are great with a cup of tea, coffee, or big glass of milk. Enjoy!
Diabetic Friendly Chocolate Chocolate Chip Cookies -- Makes About 9
2 tablespoons of date paste/puree (see below)
1 tablespoon of olive oil
2 tablespoons of plain Greek yogurt (fat free is fine)
1 large egg
1/2 teaspoon of vanilla
2 tablespoons of coconut flour
1 tablespoon of cocoa powder
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/8 teaspoon of salt
1/4 teaspoon of cinnamon
2 tablespoons of oat flour (grind oats in a food processor)
1/2 teaspoon of vanilla
1/4 cup of dark chocolate chips
In a medium bowl combine well the date paste/puree, oil, yogurt, egg, and vanilla. To make the date paste, cover dates (just barely) with very hot water. Let them sit for about five minutes, then mash the dates well with a fork (the dates should absorb most of the water, so don't drain them). To the wet ingredients add the coconut flour, cocoa powder, baking powder, baking soda, salt, cinnamon, oat flour, and dark chocolate chips and mix until everything is blended. Cut small pieces of baking parchment to fit your air fryer basket and drop 1 1/2 - 2 tablespoon scoops of batter onto the parchment, flattening out the batter to about 1/2-inch thick and leaving at least an inch between the batter mounds. Air fry the cookies at 320 degrees for about 10 minutes or until the tops are a little cracked and the cookies are mostly set on the tops when pressed with a finger. The cookies will be soft but set up a little as they cool.
