How to Make Low Sugar Cottage Cheese, Apple, Nut Muffins in Your Air Fryer or Oven (Diabetic Friendly)

These muffins are moist and delicious even without loads of sugar. The muffins are sweetened with fruit, not refined sugar or artificial sweeteners. With cottage cheese and nuts in them, the muffins are high in protein, and oats and white whole-wheat flour provide whole-grain fiber. The muffins, in moderation, are great if you're on a diabetic diet or simply want to "eat healthy." We like the muffins for breakfast, and they also make a great snack with a piece of cheese or a little nut butter. Enjoy!

Low Sugar Cottage Cheese, Apple, Nut Muffins -- Makes 12


1/4 cup of canola oil

1 large egg

3/4 cup of cottage cheese (low-fat)

1/4 cup of milk

1 teaspoon of apple pie spice (or use cinnamon)

1 teaspoon of vanilla

1/4 teaspoon of salt

1 cup of apple, core and chopped into small pieces (about 1/4-inch pieces)

1/2 cup of white whole-wheat flour

3/4 cup of quick oats

1/2 teaspoon of baking powder

1/2 teaspoon of baking soda

1/2 cup of chopped walnuts, divided

1/4 - 1/3 cup of raisins, optional


Spritz 12 muffin cups with non-stick cooking spray. To a large bowl add the canola oil, egg, cottage cheese, milk, date puree, apple pie spice, vanilla, and salt and mix them well. Add the apple and mix it in. Add the flour, quick oats, baking powder, and baking soda to the bowl and mix them into the wet batter until just incorporated. Fold in half the walnuts and the raisins if you're using them. Divide the batter evenly among the muffin cups and sprinkle on the remaining walnuts.

Air Fryer: Air fry the muffins at 320 degrees for 20-25 minutes or until golden brown and a pick inserted in a muffin comes out with no wet batter attached.

Oven: Preheat the oven to 375 degrees and bake the muffins for about 25 minutes or until golden brown and a pick inserted in a muffin comes out with no wet batter attached.

Let the muffins sit in their cups for 5-10 minutes before turning them out to cool completely.
