How to Make Low Sugar Chocolate Prune Cookies That Taste Good (Diabetic Friendly)

Yes, I know, these cookies sound weird, but they really do taste good. They also are good for you, and, if you're diabetic, the cookies can fit into your meal planning. The cookies are sweetened with fruit--bananas and prunes (if the name prunes bothers you, call them plums)--rather than refined sugar. The fruit contains natural sugars and also contributes fiber to the cookies, which slows down the way the body processes the sugar. That means blood sugar spikes are less likely. The cookies also contain protein and whole grains (oats), making them more nutritious than typical cookies. I use the air fryer to make the cookies, and they come out of the air fryer amazingly soft and delicious. One of these cookies makes a nice treat with a cup of coffee, tea, or even milk. Enjoy!

Low Sugar Chocolate Prune Cookies -- Makes 12 +


8 ounces of silken tofu

1 small banana (about 1/2 cup)

1 large egg

1/4 cup of canola oil

1 teaspoon of vanilla

1/2 cup of prune puree (let half a cup of prunes sit in hot water until soft, then drain and

mash/blend/process them)

1/4 cup of cocoa powder

1 cup of quick oats (or use oat flour)

1/2 teaspoon of baking soda

1/4 teaspoon of baking powder

1/4 teaspoon of salt

1/4 teaspoon of cinnamon, optional but good

1/2 cup of dark chocolate chips


Put the tofu, banana, egg, oil, vanilla, and prune puree into a food processor bowl and process them together in short pulses until the ingredients form a smooth mixture. Add to the food processor bowl the cocoa powder, oats, baking soda, baking powder, salt, and cinnamon and pulse them into the wet mixture until everything is well combined and the oats are mostly broken down. Stir in the chocolate chips by hand with a spoon or spatula. Drop 1 1/2 - 2 tablespoon scoops of the batter onto baking parchment, leaving at least an inch and a half between scoops. Smooth the batter out a bit with damp fingers, so that the batter mounds are about 1/2-inch thick. Bake the cookies at 350 degrees for 10 - 15 minutes or air fry the cookies at 320 degrees for about 10 minutes. Let the cookies cool a few minutes on the baking parchment before removing them.
