Yes, these breads are good, even without a lot of refined sugar or artificial sweeteners. The breads are sweetened with bananas and a little date puree (see https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar ), and they are soft, moist, and full of flavor. The breads include white whole-wheat flour and oats, so have plenty of fiber in them as well as taste. Heart-healthy walnuts top the breads and are in the batter, providing extra protein that is beneficial if you're diabetic and need to balance carbohydrates with proteins and healthy fats. We like pieces of the bread for breakfast as well as snacks with a bit of cheese or nut butter. Enjoy!
Low-Sugar Air Fryer Banana Breads (Diabetic Friendly) -- Makes 4 Mini Loaves
4 medium mashed bananas (about 2 cups)
1/3 cup of canola oil
1/2 cup of date puree
2/3 cup of milk (low-fat is fine)
1 large egg
1 teaspoon of vanilla
1 cup of white whole-wheat flour
1/2 cup of quick oats
2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
3/4 - 1 cup of chopped walnuts
Spritz four mini loaf pans with non-stick cooking spray and set them aside. In a large bowl mix together well the mashed bananas, oil, date puree, milk, egg, and vanilla. Add to the bowl the flour, oats, baking powder, salt, cinnamon, nutmeg, and 1/4 cup of the walnuts. Stir the dry ingredients into the wet ingredients until everything is just blended and moistened (don't beat!). Divide the batter evenly among the prepared pans. Sprinkle the top of the batter in each pan with some of the remaining nuts. Air fry the loaves at 320 degrees for 25-30 minutes or until a pick inserted in a loaf comes out with no wet batter attached. Let the breads cool in their pans for a few minutes before turning them out to cool completely. (If you cut the breads immediately--as in the photo below--they'll mush a bit! But they will taste great warm!)
