This bread is super moist and full of apple flavor. It's also easy to mix up in your food processor and to cook in your air fryer. I like to top the batter with pecans, which toast in the air fryer and provide a nice crunch on the top of the bread. Rather than artificial sweeteners or highly processed "natural sweeteners," the bread gets its sweetness from apples and pitted dates. Sweet spices contribute to the flavor, too. The bread is loaded with fiber and protein, and it's great if you're diabetic or want to "eat healthy." In addition to being nutritious, the bread is less likely than many breads to cause sugar spikes. We like the bread because it really tastes good! The bread makes a nice snack with a cup of tea, is great for a simple dessert, and makes a special breakfast treat in the morning. Enjoy!
Air Fryer Low Sugar Apple Bread (Diabetic Friendly) -- Makes an 8-inch Loaf
2 cups of finely chopped apple pieces (usually 2-4 apples, depending on the size, no
need to peel them, and you can chop the apples in the food processor before
processing the other ingredients)
1 cup of oats (old fashioned or quick)
1 cup of pitted dates
8 ounces of silken tofu
1/3 cup of canola oil
1/2 cup of Greek yogurt
1 teaspoon of vanilla
1/2 cup of white whole-wheat flour
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of cloves
1/4 teaspoon of allspice
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1/4 -1/2 cup of pecans to top the bread, optional but good
Process cored, unpeeled apples in the food processor. You'll need about 2 cups finely chopped apple pieces. Scrape the apple pieces out of the food processor bowl into a large mixing bowl (no need to wash the food processor bowl). Add the oats to the now empty bowl of the food processor and process them until they are rough flour. Add the dates and process them into the oat flour until they are fully incorporated and are mostly little bits in the flour. Add the tofu, oil, yogurt, and vanilla to the batter and process them into the oat flour mixture until combined. Add the white whole-wheat flour, the spices, the baking powder, and the salt and process them into the mixture. Pour the mixture into the bowl with the chopped apples and fold everything together until the ingredients are well mixed. Line an 8-inch loaf pan with aluminum foil and spritz the foil with non-stick cooking spray. Pour the batter into the pan, smooth it out a bit with a spatula, and sprinkle the top of the batter with the pecans, if you're using them (press them into the batter just a tiny bit). Air fry the bread at 320 degrees for about 45 minutes. Let the bread cool in the pan for 15-20 minutes before lifting it out by the foil to cool completely. The bread will slice more easily when cool, but it will taste great warm, if you can't wait. Store the bread, well wrapped, in the refrigerator.
