These little quiches are great for a light, easy, and economical dinner, or try them for a special breakfast or brunch. The quiches--or "bakes," if you prefer--are filled with onions, sweet bell pepper, tomatoes, and ham. Cheddar cheese melts into the ham and veggies and provides even more flavor. The quiches have no crust. Instead, you use a little crumbled bread, which helps soak up the egg custard in the quiches. I use leftover dinner rolls or bread, often on the stale side, which works just fine and prevents the bread from going to waste. The quiches cook in the air fryer in 15-20 minutes, but, depending on the size of your air fryer, you probably will have to cook them in batches. I often bake the quiches ahead of time or even the day before. They reheat well and make great, quick breakfasts and/or lunches when you're in a hurry. Enjoy!
Ham and Vegetable Air Fryer Quiches or Bakes -- Makes 6
1 small-medium onion, chopped
1 small bell pepper, chopped (red, yellow, or orange)
1/2 cup of chopped ham
1 cup of sharp cheddar cheese, divided
2 large dinner rolls or pieces of bread, preferably on the stale side, crumbled
1/2 - 1 cup of tomatoes, diced, or cherry tomatoes, halved
3 large eggs
1 1/2 cups of milk
1/4 teaspoon of pepper
1/4 teaspoon of salt
1 teaspoon of Italian seasoning
Spritz 6 ramekins (with a capacity of at least a cup) well with non-stick cooking spray. Divide the onion, pepper, ham, half of the cheese, bread, and tomatoes evenly among the ramekins. In a large bowl or measure (I use a Pyrex quart measure) whisk together well the eggs, milk, pepper, salt, and Italian seasoning. Pour the mixture evenly over the ingredients in the ramekins. Sprinkle the remaining cheese evenly on top of the mixture in the ramekins, pressing the cheese down into the liquid a little. Spritz the top of the filling in each ramekin with a little non-stick cooking spray (this will help keep the cheese from flying off in the air fryer and from burning too much). Air fry the quiches at 350 degrees for 15-20 minutes or until they are set and golden brown. I usually air fry two quiches at a time, because my air fryer isn't large. Repeat the cooking process with the remaining quiches, if necessary, while the first batch cools. You can remove the quiches from the ramekins after the ramekins cool off enough to handle or just serve the quiches in the ramekins.
