How to Make Inexpensive Chicken Cordon Bleu Meatballs in Your Air Fryer (Diabetic Friendly)

These are easy to make, cook in about 25 minutes, and are soft, moist, and delicious. The meatballs also are relatively low in fat and carbohydrates and can be included in a diabetic diet. Although I use very lean ground chicken in the meatballs, the recipe also will work with ground turkey. The meatballs are seasoned with green onions, bacon crumbles, and a little Swiss and Parmesan cheeses. While the meatballs cook, you mix up a simple sauce for the meatballs and then layer the sauce and a slice of Swiss cheese on top of the big meatballs. The sauce and cheese air fry on the meatballs and add great flavor. We like the meatballs served on top of whole-wheat egg noodles or polenta, and any leftovers make great lunches. Enjoy!

Air Fryer Chicken Cordon Bleu Meatballs -- Serves 4


1 pound of lean ground chicken or turkey (93 percent lean or greater)

1/2 cup of low fat cottage cheese

1/3 cup of chopped green onions

2-3 tablespoons of cooked bacon crumbles

1 large egg

1 tablespoon of grated Parmesan cheese

1/2 teaspoon of poultry seasoning

1/4-1/2 teaspoon of salt (remember, the cottage cheese is salty, so you may want to

limit the salt)

1/4-1/2 teaspoon of pepper

1 tablespoon of shredded Swiss cheese

1-2 teaspoons of Dijon mustard (depending on how much you like mustard)

2 slices of Swiss cheese (or use extra shredded Swiss)


Sauce


1/4 cup of plain Greek yogurt (fat-free is fine)

2 teaspoons of Dijon mustard

2 teaspoons of chopped parsley (or use 1/2 teaspoon of dried)

1-2 tablespoons of shredded Swiss cheese


In a large bowl mix together well the ground chicken, cottage cheese, chopped green onions, bacon crumbles, egg, grated Parmesan, poultry seasoning, salt, pepper, 1 tablespoon of shredded Swiss cheese, and 1-2 teaspoons of Dijon mustard. You want everything well mixed/completely blended. Cut a piece of aluminum foil that will fit in your air fryer basket and an inch or two up the sides of the basket. Spritz the foil with non-stick cooking spray. Form four large meatballs, each about the same size, and place them (in one layer) on the foil in the air fryer. Spritz the meatballs with cooking spray or olive oil. Air fry the meatballs at 360 degrees for about 20 minutes. While the meatballs are cooking mix all the sauce ingredients together well in a small bowl or cup. After the meatballs have cooked for about 20 minutes (they should reach an internal temperature of 165 degrees), spread the sauce on top of them. Then cut the cheese slices in half and put half a slice of cheese on top of each meatball (or sprinkle each meatball with 1/2-1 tablespoon of shredded Swiss cheese, if you prefer). Air fry the topped meatballs for another few minutes or until the cheese melts/browns a bit. Let the meatballs cool a few minutes before serving them.
