How to Make Easy Sourdough Cranberry-Orange Scones in Your Oven or Air Fryer

These scones are simple to make, use up a cup of your starter/discard, and make a tasty treat for dinner, breakfast, or alongside a cup of tea or coffee. The scones include baking powder, so you don't need to worry that the dough won't rise if your discard/starter isn't quite ready to give them lift. If you do have a good starter, you'll get more sourdough tang and a greater rise. The scones don't require a lot of strange ingredients, and you probably have most of them on hand. If you don't have dried cranberries, you can substitute raisins, currents, dried cherries, or even dried blueberries. I've tried the scones with multiple types of dried fruits, and they are all good. Or use a mixture. Enjoy!

Sourdough Cranberry-Orange Scones -- Makes 8


1 cup of sourdough starter/discard

Grated zest of an orange or a couple of clementines

1 cup of flour

1/3 cup of sugar

2 teaspoons of baking powder

1/2 teaspoon of salt

3 tablespoons of butter

3 tablespoons of canola oil

1/4 - 1/3 cup of dried cranberries

Sugar or raw sugar to dust the tops (optional but good)


Oven: Preheat the oven to 400 degrees. In a large bowl mix together the flour, sugar, baking powder and salt. Cut in the butter until crumbly, then drizzle in the oil and mix it in to form more crumbs (some large clumps will form, too). Stir in the grated orange zest and the sourdough starter/discard until combined. Fold in the dried cranberries. Line a baking sheet with parchment paper. Drop 1/4 cup mounds of dough on the prepared baking sheet, spacing the mounds at least an inch apart. Moisten the tops of the dough mounds with a little water, milk, or yogurt, flattening the mounds a little into disks with your hands, if you'd like more uniform-looking scones. Sprinkle the tops of the scones with a little sugar. Bake the scones for about 20 minutes or until golden. Let the scones cool on the baking sheet for a few minutes before removing them.


Air Fryer: Follow the directions for mixing up the scones. Cut small pieces of baking parchment to fit your air fryer basket. Drop 1/4 cup mounds of dough on the pieces of parchment, two or three mounds to a sheet (depending on the size of your air fryer) and spacing the mounds at least an inch apart. Moisten the tops of the dough mounds with a little water, milk, or yogurt, flattening the mounds a little into disks with your hands, if you'd like more uniform-looking scones. Sprinkle the tops of the scones with a little sugar. Put a dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the scones at 350 degrees for 10-15 minutes or until golden. Remove the scones from the basket to cool and repeat the cooking process with the remaining scones.
