These muffins are moist and sweet and contain no processed sugar or artificial sweeteners. They also are full of whole grains and contain a good amount of protein. In moderation, the muffins are great if you're on a diabetic diet or want to "eat healthy." I like the muffins because they taste really good and help me use up a lot of squishy bananas. In addition to the bananas, the muffins are sweetened with a little date puree (see below and https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugarand ) and get an extra boost from sweet spices. They also are studded with raisins. Chopped, toasted walnuts add crunch. The muffins make a nice breakfast treat or snack with a cup of coffee or tea. Enjoy!
Low Sugar, Whole-Grain Banana Muffins -- Makes 16
4 medium very, very soft bananas, mashed (about 2 cups)
1 large egg
1/3 cup of canola oil
1 tablespoon of milled flax seeds
1/2 cup of date puree (pour boiling or very hot water over the dates to just cover them,
let them cool and mash or process the water/dates together)
1/2 cup of plain Greek yogurt*
1/2 cup of milk*
1 1/4 cups of quick oats
1/2 cup of white whole-wheat flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 teaspoon of nutmeg
1/2 teaspoon of cinnamon
1/2 cup of raisins
1 cup of chopped, toasted walnuts, divided
(*Note: You can substitute 1 cup of buttermilk or plain kefir for the yogurt and milk.)
Spritz 16 muffin cups with non-stick cooking spray. In a large bowl beat together until well blended the bananas, egg, oil, milled flax seeds, date puree, yogurt, and milk (or buttermilk or kefir). Add to the bowl the oats, flour, baking powder, baking soda, salt, and spices and mix them into the wet ingredients until blended. Stir in the raisins and 1/2 cup of the walnuts. Divide the mixture among the muffin cups and sprinkle the remaining walnuts evenly over the top of the batter.
Air Fryer: Air fry the muffins at 320 degrees for about 25 minutes or until a deep golden brown. The muffins may puff up then settle down. That's fine.
Oven: Bake the muffins at 350 degrees for about 30 minutes or until a deep golden brown.
