How to Make Easy, Parmesan Caesar Salmon in Your Air Fryer (Diabetic Friendly)

This easy salmon makes a great, simple main dish and cooks in 10-15 minutes in the air fryer. The recipe includes plenty of Parmesan cheese, as do good Caesar salads, and panko bread crumbs lend a nice crunchiness to the topping. The fish comes out of the air fryer moist and delicious and makes a nice meal when served atop a simple romaine salad or alongside a green vegetable--like sauteed spinach--for a low carbohydrate meal. Salmon is one of the most nutritious main dishes around, is loaded in beneficial Omega-3s, and is a great choice for diabetics and anyone else wanting to "eat healthy." It's also really tasty. Air Fryer Parmesan Caesar Salmon -- serves 2

2 salmon pieces, 4-6 ounces each

1 1/2 tablespoons of light mayonnaise

1 1/2 tablespoons of non-fat Greek yogurt

1/4 teaspoon of lemon-pepper seasoning

1/4 teaspoon of onion powder

1/4 cup of shredded Parmesan cheese

2 tablespoons of seasoned panko breadcrumbs (preferably whole-wheat)

Fold a sheet of aluminum foil into a 6-7-inch square or rectangle so it just fits in the bottom and a little up the sides of your air fryer. Coat the foil with non-stick cooking spray. Pat the salmon dry with a paper towel. Place the pieces side-by-side on the foil (which should be inside your air fryer basket now) with about an inch separating them. Sprinkle the fish with a little lemon pepper and then spritz the pieces with non-stick cooking spray. Let the fish sit a few minutes while you prepare the topping. In a small bowl, blend well the mayonnaise, yogurt, remainder of lemon pepper, onion power and 2 tablespoons of the Parmesan. Divide the mixture between the two pieces of fish, coating the tops and sides of the fish. Sprinkle the remaining 2 tablespoons of Parmesan on top of the fish and then sprinkle on the panko. Spritz the panko-topped fish with non-stick cooking spray. Set the air fryer temperature to 400, put the basket into the air fryer and cook the salmon for 10-15 minutes or until the topping is golden brown and the fish flakes easily with a fork. Lift the fish out of the air fryer by inserting a spatula under the foil and grasping the edges of the foil to lift both foil and fish at once. Let the fish cool a few minutes before serving it.
