How to Make Easy, "Non Fishy" Crispy Cod With Garlic and Herbs in Your Air Fryer (Diabetic Friendly)

This simple recipe takes minutes to prepare, and the fish cooks in your air fryer in 10-15 minutes. The mild fish gets a coating that includes garlic and herbs and comes out of the air fryer crispy on top and full of flavor. I use fresh herbs when I have them to make the recipe, but dried will work if that's what's on hand. This isn't a fussy recipe. The fish is great if you're on a diabetic diet or want to "eat healthy," as it includes a good amount of protein and is low in "bad fats" and carbohydrates. Just don't go overboard on the bread crumbs. The fish makes a nice "non-fishy" tasting seafood option as well as being quick and easy to make. Enjoy!

Crispy Cod With Garlic and Herbs -- Serves 2-4


3/4 - 1 pound of boneless cod pieces, patted dry

1 tablespoon of chopped garlic

1-2 tablespoons of olive oil

2 tablespoons of chopped parsley (or 2 teaspoon of dried parsley flakes)

2 tablespoons of chopped dill (or 2 teaspoons of dried dill)

1/4 teaspoon plus 1/8 teaspoon of salt, divided

1 teaspoon of lemon juice

1/4 teaspoon of onion powder

1/4 teaspoon of pepper

1 tablespoon of grated Parmesan cheese

2-3 tablespoons of plain Greek yogurt

2 tablespoons of seasoned Panko bread crumbs


Spritz an 8-inch square pan with non-stick cooking spray or line the pan with aluminum foil and spritz the foil with spray. Lay the fish in the pan, leaving at least an inch of space between each of the fish pieces. Sprinkle the fish with 1/8 teaspoon of salt. In a small, microwave-safe bowl combine the garlic and olive oil and microwave them together on high for about 30 seconds or until hot. Stir in the parsley, dill, salt, lemon juice, onion powder, pepper, Parmesan, and Greek yogurt and mix everything well. Divide the mixture among the fish pieces and spread it out evenly on top of each piece of fish. Sprinkle the bread crumbs evenly on top of the topping mixture, pressing the crumbs into the topping a bit. Spritz the bread crumbs with a little non-stick cooking spray or olive oil spray. Air fry the fish at 400 degrees for 10-15 minutes or until the fish flakes with a fork and the topping is golden brown. Let the fish cool for a couple of minutes before serving it.
