These cookies are really good! They also are a little different with a combination of tahini, sesame seeds, and dates. The dates provide most of the sweetness to the cookies, and you won't need any processed sugar or artificial sweeteners. The cookies also include a good amount of protein, thanks to almond flour in the dough, and, in moderation (as always!), the cookies are great if you're on a diabetic diet or want to "eat healthy." Crunchy on top, the cookies are soft in the centers with little hits of sweetness from chopped dates. The cookies are definitely worth eating from the standpoint of taste as well as nutrition! We like the cookies for a simple dessert with coffee or tea, and they also would make a nice after school snack with a glass of milk. Enjoy!

Sesame Tahini Date Cookies (Diabetic Friendly) -- Makes about 12
1 cup of rolled oats
1/2 cup of almond flour
1/2 teaspoon of baking soda
1/4-1/2 teaspoon of salt (if your tahini has salt in it, go with 1/4 teaspoon)
1/4 cup of tahini
1/4 cup of canola oil
1/3 cup of date puree (barely cover pitted dates with boiling water, cool the mixture,
and mash or process it in a food processor or blender)
1 teaspoon of vanilla
1/2 cup of chopped, pitted dates
3-4 tablespoons of sesame seeds
In a large bowl combine the oats, almond flour, baking soda, and salt. Add the tahini, canola oil, date puree, and vanilla to the bowl and mix them in well. Stir in the chopped dates.
Air Fryer: Cut small pieces of baking parchment to fit your air fryer basket. Drop scoops of dough (about 1 1/2 tablespoons each) onto the parchment, leaving an inch or two of space between the dough mounds. Flatten the mounds gently with damp fingers until they are about 1/2-inch thick. Sprinkle the tops of the dough mounds with sesame seeds. Spritz the tops of the cookies with a little non-stick cooking spray or canola oil (it helps keep the seeds from flying off the tops during the air frying process). Air fry the dough at 320 degrees for 8-10 minutes or until the cookies are a deep, golden brown. Let the cookies cool on their parchment for a few minutes before trying to remove them.
Oven: Preheat the oven to 350 degrees. Line a baking sheet with baking parchment. Drop scoops of dough (about 1 1/2 tablespoons each) onto the parchment, leaving a couple of inches of space between the dough mounds. Flatten the mounds gently with damp fingers until they are about 1/2-inch thick. Sprinkle the tops of the dough mounds with sesame seeds. Bake the cookies for 10-15 minutes or until they are a deep, golden brown. Let the cookies cool on their parchment for a few minutes before trying to remove them.
