How to Make Easy, No Sugar Added Mango Biscuit Nests (Diabetic Friendly, No Artificial Sweeteners)

These little biscuit nests are surprisingly good for something so simple to make! The nests also are reasonably nutritious with a mixture of whole grains, flax seeds (no expensive eggs!), canola oil (no butter!), and no refined sugar. If you're on a diabetic diet or want to "eat healthy," the nests make a good treat (as always, in moderation). I usually make the biscuit nests in the air fryer, and they come out nice and crunchy on the sides and with a soft center filled with mango puree. You can buy the puree, but I make my own with dried mango. I use the puree for this recipe and for others you'll find on the website (see https://www.thenfeedthem.com/post/how-to-make-low-sugar-tropical-mango-cookies-in-your-air-fryer-diabetic-friendly-no-artificial-swe, for example). All you need to do is barely cover dried mango pieces (try to find the kind with no added sugar) with boiling water, let them stand for a few hours to absorb most of the water, and then process the mango and any remaining water in a food processor. The puree, which you should store in the refrigerator, is great for baking. You also can use the puree as a spread on toast in lieu of sugary jams. In this recipe, the puree goes in the center of the "nests," sort of like the filling in thumb-print cookies. The puree is sweet, but only lightly so, and it gives the biscuits great flavor. We like the biscuit nests as a dinner treat, for breakfasts, and with a cup of tea or coffee for a snack or dessert. Enjoy!

No Sugar Added Mango Biscuit Nests (Diabetic Friendly) -- Makes 8


1 cup of white whole-wheat flour

1 tablespoon of milled flax seeds

1 1/4 teaspoons of baking powder

1/4 teaspoon of salt

4 tablespoons of canola oil

2 tablespoons of mango puree

2 tablespoons of milk

For the filling: 8 teaspoons of mango puree


In a large bowl combine the white whole-wheat flour, milled flax seeds, baking powder, and salt. Drizzle in and then mix in with a fork the canola oil, then the mango puree, then the milk. The mixture should come together.

Air Fryer: Cut small pieces of baking parchment to fit your air fryer basket. Drop 8 portions of dough onto the baking parchment, leaving at least an inch between the dough portions. With your fingers, pat the dough into balls, then use your thumb or fingers to form a depression or well in the center of each dough ball. Put a teaspoon of mango puree into the center of each dough ball. Air fry the biscuit nests at 335 degrees for about 10 minutes or until a deep golden brown. Let the biscuit nests sit on their parchment for a few minutes to cool before eating them (the filling will be hot!).

Oven: Preheat the oven to 400 degrees. Line a baking sheet with baking parchment. Drop 8 portions of dough onto the baking parchment, leaving at least an inch or two between the dough portions. With your fingers, pat the dough into balls, then use your thumb or fingers to form a depression or well in the center of each dough ball. Put a teaspoon of mango puree into the center of each dough ball. Bake the biscuit nests for 10-15 minutes or until they are a deep golden brown. Let the biscuit nests cool on their parchment for a few minutes before eating them (the filling will be hot!).
