How to Make Easy, Low Carb Spring Quiches With Only Two Eggs (Air Fryer or Oven, Diabetic Friendly)

These mini quiches are easy and quick to make. They are full of protein and only require two eggs. The not so secret ingredient is cottage cheese, which gives the quiches extra protein, moistness, creaminess, and overall good taste! With spinach and tomatoes as well as a little Parmesan and cheddar cheeses, the quiches are loaded with flavor as well as nutrition. If you're on a diabetic diet or want to "eat healthy," the crustless, low carb quiches are a great option. We like the quiches with turkey sausages for a nice breakfast, and the little quiches also would make a great, light lunch alongside or atop a salad. Enjoy!

Low Carb Spring Quiches -- Makes 6-8
1/2 cup of low-fat cottage cheese
2 large eggs
1/8 teaspoon of pepper
1/8 teaspoon of salt
1/4 teaspoon of garlic powder
1 teaspoon of minced dried onion
1 1/2 handfuls of fresh spinach chopped (about 1/2-3/4 cup after chopping)
6-8 grape or cherry tomatoes, halved
1/3 - 1/2 cup of thick shredded cheddar cheese
1 tablespoon of grated Parmesan cheese
Spritz 6-8 muffin cups well with non-stick cooking spray. In a large bowl or measure whisk together well the cottage cheese, eggs, pepper, salt, and garlic powder. Stir in the minced dried onion, spinach, tomatoes, cheddar cheese, and Parmesan cheese. Divide the mixture evenly among the muffin cups.
Air Fryer: Air fry the quiches at 320 degrees for 16-20 minutes or until a deep golden brown. Let the quiches cool in their muffin cups for a few minutes before removing them.
Oven: Preheat the oven to 350 degrees. Bake the quiches for about 20 minutes or until a deep golden brown. Let the quiches cool in their muffin cups for a few minutes before removing them.
