How to Make Easy, Inexpensive, Make-Ahead, Air Fryer Turkey Meatballs (Diabetic Friendly)

These meatballs are simple to make with inexpensive (well, relatively, given high food prices now), easy-to-find ingredients, and they air fry in about 15 minutes. The meatballs come out of the air fryer lightly browned, tender, and juicy. You can use them multiple ways during the week ahead--in spaghetti sauce, for Swedish meatballs, with mushroom gravy, or stuffed in a potato with a little barbecue or other sauce on top. Because the meatballs are lightly seasoned, they can easily accompany many dishes. The meatballs also are lean and incorporate a small amount of fiber-rich whole-grain bread, so they are suitable if you're on a diabetic diet or want to "eat healthy." I usually make a small batch--9-10 meatballs--but you can easily double the recipe with no problems. We especially like the meatballs with sauteed mushrooms and onions. Enjoy!

Air Fryer Make Ahead Turkey Meatballs -- Makes 9-10 Meatballs


8 ounces of lean ground turkey (93 percent)

1/2 cup of plain Greek yogurt

1 slice of whole-grain bread, crumbled (1/3-1/2 cup)

2 tablespoons of grated Parmesan cheese

1/2 teaspoon of poultry seasoning

1/4 teaspoon of garlic powder

1/4-1/2 teaspoon of salt

2-3 tablespoons of chopped onion


In a large bowl mix together well all of the ingredients listed above. Let the mixture stand for a few minutes while you line your air fryer basket with aluminum foil and spritz the foil with non-stick cooking spray. Alternatively, use an aluminum foil pan that fits in your air fryer basket and spritz the pan with non-stick spray. Form 9-10 meatballs with damp hands and place the meatballs on the foil, preferably not touching. Air fry the meatballs at 320 degrees for about 15 minutes or until they reach an internal temperature of 165 degrees and are lightly browned. You can eat the meatballs immediately after they've cooled a little or let the meatballs cool completely and refrigerate them for another day.
