How to Make Easy, Inexpensive Air Fryer Pineapple Pork Chops With Sweet Potatoes (Diabetic Friendly)

This air fryer meal is simple to make, good, and economical. Everything cooks in your air fryer in about 20 minutes. Sweet potatoes and onions cook first in your air fryer, then the pork chops go on top. Both the potatoes and the pork chops are topped with a simple home-made barbecue sauce that's low in sugar and salt and quite tasty. The sauce includes pineapple juice and a little ginger (I use the kind that comes in a squeeze bottle from Costco for ease) and really complements the potatoes and pork. With plenty of protein and beneficial fiber in the sweet potatoes, the dish is great (in moderation, of course!) if you're on a diabetic diet or want to "eat healthy." We like the pork chops and sweet potatoes with a green vegetable and a simple salad for a nice dinner that's quick and nutritious. Enjoy!

Air Fryer Pineapple Pork Chops with Sweet Potatoes -- Serves 2-3


2 cups of peeled, chopped sweet potatoes (cut into 1/2-inch or so pieces)

1/2 medium onion, chopped (about 1/2 cup)

2-3 teaspoons of olive oil

1/4 teaspoon of salt, divided

3-4 boneless pork chops, each about 1/2-inch thick

1/8 teaspoon of garlic powder

5-6 slices of canned pineapple, chopped into smallish pieces (or use tidbits), juice saved

Barbecue sauce (see below)


Line your air fryer basket with aluminum foil and spray the foil with non-stick cooking spray. Or, alternatively, use an aluminum foil pan and spritz it with the cooking spray. Sprinkle the potatoes on the foil or in the pan, along with the onion. Drizzle on the olive oil and sprinkle on 1/8 teaspoon of salt. Air fry the potatoes and onions at 360 degrees for 7-8 minutes or until not quite soft (you should still have just a bit of resistance when you pierce the potatoes with a knife). Mix half of the barbecue sauce with the potatoes and lay the pork chops on top of the potatoes. Sprinkle the chops with 1/8 teaspoon of salt and 1/8 teaspoon of garlic powder. Arrange the pineapple pieces on top of the pork chops and then pour the remainder of the barbecue sauce on top of the pork and pineapple. Air fry the pork chops on top of the partially cooked potatoes at 360 degrees for 7-8 minutes or until the pork reaches an internal temperature of 145 degrees. If your air fryer has a broiler setting, you can switch from the air fryer setting once the pork reaches 130-135 degrees and broil the pork at 360 for 2-3 minutes or until it reaches 145 degrees. Let the pork and potatoes stand a few minutes before serving them.


Barbecue sauce


1 tablespoon of finely chopped/ground fresh or squeeze bottle ginger

1 tablespoon of tomato paste

1 teaspoon of apple cider vinegar

1 tablespoon of Worcestershire sauce

1/4 teaspoon of salt

1/8 teaspoon of pepper

1/2 teaspoon of onion powder

1/2 cup of pineapple juice (reserved from the pineapple used for the pork and potatoes)


In a small bowl or cup mix together the ginger, tomato paste, apple cider vinegar, Worcestershire sauce, salt, pepper, and onion powder. Whisk in the pineapple juice.
