These little souffles are simple to make and loaded with protein. They make a nice main dish if you're avoiding meat or make a hearty side dish. The cottage cheese provides low-fat protein to the souffles, and the goat cheese adds flavor and a bit more creaminess. I use fresh dill in the souffles, but you can also use dried dill or substitute other herbs you prefer. I sometimes substitute chives for the dill, for example, and the chives are quite good in the souffles. The souffles are light, not heavy and greasy, and they are acceptable, in moderation (of course), if you're on a diabetic diet. In addition to serving the souffles as a light main dish or hearty side dish for dinner, try the souffles on top of a salad or for a breakfast that's a bit different. Enjoy!
Air Fryer Cottage Cheese and Goat Cheese Souffles -- Makes 4 Mini Souffles
1 cup of low-fat cottage cheese
2 large eggs
1/2 cup of crumbled goat cheese, plus extra to sprinkle on top of the souffles
1/4 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of quick oats
3-4 sprigs of fresh dill, chopped (about 1 tablespoon of chopped dill or use 1 teaspoon
of dried dill), plus a little extra to garnish, if you like
Spritz four small ramekins (3/4-1 cup) well with non-stick cooking spray. Put the cottage cheese, eggs, goat cheese, salt, pepper, and oats in the bowl of a food processor with the S-blade attached and process the ingredients together until you have a smooth mixture. Stir in the dill and divide the mixture evenly among the ramekins. Sprinkle the top of the batter in each ramekin with a little extra goat cheese (about 1/2 teaspoon, each) if you like. Air fry the souffles at 350 degrees for about 20 minutes, then turn down the heat to 320 degrees and air fry the souffles for another 5 minutes or until just set. Let the souffles stand for 5 minutes or until you can handle them (they'll deflate, and that's fine). Run a knife around the edges of the souffles in the ramekins and tip the souffles out of the ramekins to serve the souffles. Garnish the finished souffles with a little extra dill if you like.
