How to Make Easy Air Fryer Crispy Parmesan Pork Chops With a Lemon Sauce (Diabetic Friendly)

These pork chops take minutes to prepare and air fry in about 15 minutes. Crispy on the outside, the chops are tender and juicy on the inside. They are great "as is," or try them with the easy lemon sauce I'm including below. I usually make the sauce in the microwave--it's definitely a "no fuss" version, yet it tastes incredibly good on the pork. The sauce also is nice on veggies. You can make the sauce ahead of time and reheat it, if you'd like. The pork chops, as long as you don't go overboard on the panko, are fine if you're on a diabetic diet, as is the home-made lemon sauce, which omits the sugars and weird preservatives found in commercial versions (it's also considerably less expensive to make rather than buy). We like the pork chops with a salad, a green vegetable, and baby potatoes. Enjoy!

Air Fryer Crispy Parmesan Pork Chops -- Serves 4

2 large boneless pork chops about 1 1/2 - 2 inches thick (about 16 ounces)

1/4 teaspoon salt

1/4 teaspoon no salt lemon pepper seasoning

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

2 - 3 tablespoons grated Parmesan cheese

1/4 cup of seasoned panko bread crumbs

Cut a piece of aluminum foil to fit inside your air fryer basket and an inch or so up the sides of the basket. Spritz the foil with non-stick cooking spray. Pat the pork dry with a paper towel and lay the chops, non touching, on the foil in the basket. Mix the salt, lemon pepper, garlic powder, onion powder, and Parmesan cheese together in a small cup. Sprinkle half on one side of the pork and spritz the pork with a little olive or canola oil or non-stick cooking spray. Turn the pork over on the foil and sprinkle the remaining mixture on top of the second side of the pork. Spritz the mixture with the oil or non-stick cooking spray. Air fry the pork at 360 degrees for 6 minutes and then flip it over. Sprinkle the panko evenly on top of the second side of the pork chops, pressing it into the pork a little (you'll only be putting the panko on one side of the pork). Spritz the panko with oil or non-stick cooking spray. Air fry the pork chops for another 6 minutes at 360 degrees or until the pork reaches an internal temperature of 145 degrees. Remove the pork from the air fryer and let it sit on the foil for about five minutes before serving it, with or without the lemon sauce below the photo.

No Fuss Lemon Sauce

1 1/2 cups of water

1 teaspoon of reduced sodium chicken base (I use "Better Than Bullion")

2 tablespoons of lemon juice

1/4 teaspoon of garlic powder

1/4 teaspoon of salt

2 teaspoons of dried parsley (or a tablespoon of fresh, if you have it)

1 teaspoon of minced dried onion

2 tablespoons of water mixed with 2 teaspoons of potato starch or corn starch

2 tablespoons of light sour cream

1 tablespoon of grated Parmesan cheese

In a large microwave safe bowl or measure (I use a quart Pyrex measure), mix the water, chicken base, lemon juice, garlic powder, salt, parsley, and dried onion. Microwave the mixture on high for 2 - 3 minutes and stir it well. Stir in the water/potato starch mixture and microwave the sauce mixture for about 30 seconds or until it thickens to a thin sauce (it won't be quite as thick as a gravy). Stir in the sour cream and grated Parmesan and serve the sauce with the pork chops, either on top or alongside.
