This is a simple, quick recipe that helps you use up those squishy bananas on your counter. The breads are moist, tender, and sweet--but not too sweet. You can use plain bran flakes in the breads or raisin bran. Either will work fine. You also can add raisins and nuts to the batter, if you like. My preference is to sprinkle the tops of the loaves with about 1/2 cup of chopped or broken nuts (pecans or walnuts, usually) and a little sugar, which gives the tops of the loaves a nice, crunchy coating. I use one bowl to mix up the batter, which will fill four mini loaf pans. The loaves cook in the air fryer in 20-25 minutes and smell wonderful while cooking (and when you take them out of the air fryer). Although I think of the breads as a nice breakfast treat, a slice or two also will make a great snack or even dessert, especially with fresh fruit. Enjoy!
Easy Air Fryer Banana Bran Breads -- Makes 4 Mini Loaves
4 medium bananas, mashed
1/3 cup of canola oil
1 large egg
2/3 cup of buttermilk (or use 1/2 cup of plain yogurt and enough milk to make up the
rest)
1/2 cup of dark brown sugar
1 cup of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 1/2 cups of bran or raisin bran flakes
1/2 - 1 cup of nuts (I use pecans or walnuts, usually) to sprinkle, optional
Sugar to sprinkle, optional
Spritz 4 mini loaf pans well with non-stick cooking spray. In a large bowl, whisk together well the mashed bananas, oil, egg, buttermilk, and brown sugar. Stir in the flour, baking powder, baking soda, and salt until just combined. Stir in the bran flakes until combined (but don't beat the batter). Divide the batter evenly among the loaf pans. Sprinkle the top of the batter with nuts and a little sugar, if you'd like, then spritz the loaves with a little non-stick cooking spray to hold the sugar in place. Put 1-2 filled loaf pans in your air fryer basket, put the basket in the air fryer, and air fry the breads for 20-25 minutes or until just firm and a pick inserted in the center of a loaf comes out with no wet batter attached. Remove the loaves from the air fryer basket to cool and repeat the cooking process with the remaining batter. Let the cooked loaves sit in their pans for 10 minutes or until you can handle them and then tip out the cooked loaves to finish cooling.
