Making four mini carrot breads in your air fryer is simple. The air fryer will turn out great little breads that are moist, full of carrot flavor, and that cook in far less time than in your conventional oven. The recipe I'm posting includes quick oats, which give the breads great texture and "healthy" whole grains. The breads are sweetly spiced, and also include dried cranberries and coconut. You can top the breads with nuts if you'd like. I use walnuts which toast up nicely as the breads cook. The breads are great for breakfasts, snacks, and even desserts. Enjoy!
Air Fryer Carrot Breads -- Makes 4 Mini Loaves
2 tablespoons of dark brown sugar
1/4 cup of sugar
1/4 cup of canola oil
1 large egg
1 teaspoon of vanilla
1/2 cup of buttermilk
3/4 cup of flour
1/2 cup of quick oats
1 1/4 teaspoon of baking powder
3/4 teaspoon of cinnamon
1/4 teaspoon of allspice
1/8 teaspoon of nutmeg
1/4 teaspoon of salt
3/4 cup of shredded carrots
1/4 cup of coconut
1/4 cup of dried cranberries
1/2 - 3/4 cup of broken walnuts
Coat four mini loaf pans with non-stick cooking spray. In a medium bowl or measure, whisk together well the sugars, oil, egg, vanilla, and buttermilk. Stir in until blended the flour, oats, baking powder, cinnamon, allspice, nutmeg, and salt. Fold in the carrots, then the coconut and dried cranberries. Divide the batter evenly between the four pans. Scatter the walnuts evenly over the top of the batter in each mini loaf pan. Put two of the filled pans into your air fryer basket, put the basket in the air fryer, and air fry the breads at 320 degrees for about 15 minutes or until a pick inserted in the center of a loaf comes out with no wet batter attached. Remove the loaves from the basket to cool in their pans for 5-10 minutes. Repeat the cooking process with the remaining loaves.
