These cookies are about as easy as cookies can be, and they taste great--soft, sweet, just a tad chewy, and studded with chocolate chips. Making the cookies also is a good way to use up those squishy bananas on the counter. Yes, the cake mix is a convenience item, and, no, people won't know you've used the mix unless you tell them. The cookies fall into the "comfort food" category, in my view. They are simple, offer the familar tastes of bananas, oats, and chocolate chips, and make great snacks for kids and adults who aren't into "new, weird, and different" foods. I love the convenience of the cookies when I'm in a hurry and don't have time to fuss with a fancy recipe. You can mix up the cookies in minutes and pop them in the oven while you get dinner. The cookies are wonderful alongside fruit, ice cream, or a big glass of milk. The treats also are nice with a cup of tea or coffee for a little "pick me up." Enjoy!
Cake Mix Banana-Oatmeal Chocolate Chip Cookies -- Make 30+
1/2 cup of canola oil
2 large eggs
1 teaspoon of vanilla
1 cup of mashed, very ripe bananas (usually 2 bananas, depending on the size)
1 yellow cake mix (15.25 ounces)
1 1/2 cups of quick oats
1 cup of chocolate chips
Line baking sheets with parchment paper and preheat the oven to 350 degrees. In a large bowl whisk together well the oil, egg, vanilla, and bananas. With a spoon stir in the cake mix until just combined. Then stir in the oats and, finally, the chocolate chips until everything is combined. Drop 1 1/2 tablespoon scoops of dough onto the prepared baking sheets, leaving about 2 inches between the dough mounds. You can flatten the dough a little with your fingers (dampened with a little water), if you like, but it isn't critical. Bake the cookies for about 15 minutes until they are just golden. Remove the cookies from the oven and leave them on the baking sheet for a few minutes to firm up before removing them from the pan to cool completely.
