How to Make an Inexpensive, High Protein, Low Carb Cauliflower and Cottage Cheese Bake (Diabetic Friendly, Air Fryer or Oven)

You can make this easy dish in minutes, and it air fries in about half an hour. The bake is creamy, cheesy, and loaded with inexpensive (well relatively) protein. The low-carb bake is great if you're on a diabetic diet. You can make the dish with fresh cauliflower that you cook ahead, or you can do the easy option of using a bag of frozen, riced cauliflower. The frozen cauliflower cooks in about three minutes in the microwave, and then you simply stir in the other ingredients and air fry or bake the dish. You can serve the dish as a main course--kind of like a low-carb mac n' cheese--or as a hearty side dish. We especially like the cauliflower bake with meatloaf. Enjoy!

Cauliflower and Cottage Cheese Bake -- Serves 4


12-ounce bag of frozen, riced cauliflower

1/2 teaspoon of onion powder

1/4 teaspoon of pepper

1/4 teaspoon of salt

1 cup of low-fat cottage cheese

1 tablespoon of grated Parmesan cheese

1 large egg

1 teaspoon of dried parsley flakes

1/2 teaspoon of smoked paprika

1/2-3/4 cup of shredded cheddar cheese (I use the thick-cut shreds)


Spritz a casserole dish or 8-inch square pan with non-stick cooking spray. Microwave the frozen cauliflower for about three minutes or until it is just beginning to soften. In a large bowl mix the cauliflower with the onion powder, pepper, salt, cottage cheese, and Parmesan. Stir in the egg, parsley flakes, smoked paprika, and shredded cheddar and pour the mixture into your prepared dish, smoothing it out evenly.

Air Fryer: Air fry the cauliflower mixture at 320 degrees for 30-35 minutes or until it is bubbly and a deep spotty brown.

Oven: Preheat the oven to 350 degrees and bake the cauliflower mixture for about 35 minutes or until it is bubbly and a deep spotty brown.
