In this easy and tasty dish inexpensive cottage cheese, cheddar cheese, and phyllo pastry come together to create a crispy, crunchy pie with a soft, creamy filling. It's good! I came up with the dish--a variant of another phyllo pie I make with spinach (see https://www.thenfeedthem.com/post/what-to-make-with-leftover-phyllo-fillo-or-filo-dough-an-easy-cottage-cheese-and-spinach-pie )--to use up some phyllo that had made it to the back of my refrigerator and needed to be turned into something other than strudel. You don't need to go through a lot of hassle with the phyllo in this recipe. It's torn or cut, tossed with a little oil, and then forms the top and bottom of the pie--easy! We like the pie for lunch or dinner, and it would make a great dish for a fancy brunch, too. The pie reheats well in the air fryer at 325 degrees. Enjoy!
Cottage Cheese and Phyllo (or Filo) Pie -- Serves 4
1 - 1 1/2 cups of phyllo pastry, torn or cut into small pieces (about 1/2 to 1-inch)
2 - 3 teaspoons of canola or olive oil
1 cup of cottage cheese
2 large eggs
1 - 2 teaspoons of minced dried onion
1/8 teaspoon of pepper
1/8 teaspoon of salt
1 teaspoon of minced dried parsley
1 cup of shredded sharp cheddar cheese
1 - 2 tablespoons of grated Parmesan cheese
2 teaspoons of sesame seeds (optional but good)
Spritz a quart baking dish with non-stick cooking spray and set it aside. In a large bowl toss the phyllo pieces with the oil until most of the pieces are moistened a bit with the oil. Using your hands is easiest, and try to avoid large clumps (you'll probably have a few). Put half of the phyllo pieces on the bottom of the baking dish and air fry them at 325 degrees for about 6 minutes or until a bit crunchy. While the dish is in the air fryer, in a large bowl or measure whisk together well the cottage cheese, eggs, dried onion, salt, pepper, and dried parsley until well combined. Stir in the shredded cheddar and Parmesan cheeses. Pour the cheese mixture over the bottom layer of phyllo after the phyllo has finished in the air fryer. Sprinkle/spread the remaining phyllo on top of the filling and sprinkle the sesame seeds on top of the phyllo. Spritz the top of the seeds/phyllo well with non-stick cooking spray. Air fry the pie at 325 degrees for 25-35 minutes or until golden brown and just set in the center.
