How to Make an Easy Plum and Almond Tart in Your Air Fryer (Fruit Sweetened, Diabetic Friendly, No Artificial Sweeteners)

This plum tart is good and easy to make! It's mildly sweet, and you can actually taste the plums, not just sugar! The tart gets it's sweetness from the plums, dates, and a bit of orange juice, not from refined sugar. In moderation (of course!), the tart is great if you're on a diabetic diet or want to "eat healthy." The tart cooks in the air fryer in 15-20 minutes, and you can also bake it in a regular oven, if you prefer. Just preheat the oven to 400 degrees and bake the tart for about 20 minutes. We like the tart for a nice, special dessert, especially with a small scoop of vanilla ice cream (well, we'd like a large scoop, but that's not going to happen!). Enjoy!

Easy Air Fryer Plum and Almond Tart -- Serves 4+
4 small/medium plums, pitted and sliced (about 1 1/2 cups)
1/4 cup of orange juice (use the "no sugar added" juice)
1 teaspoon of cornstarch
1/4 teaspoon of cinnamon
1/4 cup of chopped, pitted dates
1 small sheet of puff pastry--about 8- x 4-inches--thawed
2-3 tablespoons of chopped almonds
In a large bowl or measure combine the plums, juice, cornstarch, and cinnamon and microwave the mixture on high for 2-3 minutes or until the plums start to break down and release their juices. Stir in the chopped dates and let the mixture sit for 10-15 minutes to cool a little and let the dates soften. While the mixture is sitting, cut a sheet of baking parchment to fit your air fryer basket. Put the puff pastry on the sheet. Stir the plum mixture well and spoon it onto the center of the puff pastry sheet, spreading it out from one end of the sheet to the other, but leaving a border of about an inch on each side. With damp fingers, bring up the sides of the pastry sheet to form a "boat" to hold the plum filling and pinch, pleat, or fold the sides together at each corner. The object is simply to keep the filling in the pastry, although a little may bubble out while the tart cooks. Not to worry. This is more of a "rustic" pastry, not a "fou fou" one. Sprinkle the nuts on top of the filling. Spritz the top of the nut topped filling with a little non-stick cooking spray (it will help keep the nuts in place). Air fry the tart at 375 degrees for 15-20 minutes or until the pastry is golden brown. Let the tart cool a little before serving it warm.
