This isn't your usual version of "toad in the hole," but it's really good, simple to make, and quite tasty. It's also easy on the cook, as the meat, vegetable, and carbohydrate are all included in one dish. Unlike more traditional versions, this toad in the hole is considerably lighter in calories and fat and includes white whole-whole wheat flour for beneficial fiber. I use inexpensive chicken feta sausages (usually from Aldi or Lidl--the precooked sausages), which rest on a bed of cooked spinach and get a sprinkling of feta cheese before the pudding batter goes on top. The pudding won't rise as high as traditional versions, but it will be good! It's also acceptable, in moderation, of course, if you're on a diabetic diet. We like the dish served with a simple salad on the side. If you have leftovers, they warm well in the air fryer or microwave (on medium power). Enjoy!
Air Fryer Spinach, Feta, and Chicken Sausage Toad in the Hole -- Serves 4
1 1/2 - 2 cups of cooked spinach, drained
12-ounce package of pre-cooked chicken feta sausage (I use the version from Lidl or
Aldi)
4 tablespoons of crumbled feta cheese, divided
2 teaspoons of minced dried onions
1 cup of milk (low-fat is fine)
1 cup of white whole-wheat flour
2 large eggs
1/4 teaspoon of salt
1/4 teaspoon of pepper
Spritz an 8-inch square pan with non-stick cooking spray (I use a disposable aluminum pan inside a regular 8-inch pan for easy cleanup). Spread the cooked spinach evenly on the bottom of the pan. Lay the sausages on top of the spinach and sprinkle on half of the feta cheese and the minced dried onions. In a large bowl or measure whisk together well the milk and flour. Whisk in the eggs, salt, and pepper until the batter is smooth. Pour the batter over the spinach/sausage mixture in the pan. Sprinkle on the remaining feta. Air fry the toad in the hole at 375 (pre-heat the air fryer before putting in the pan, for best results) for about 20 minutes or until the top of the pudding is a deep golden brown. The pudding will puff up, then settle down in the pan.
