This turkey loaf is good! It's also fast to put together and cooks in about 40 minutes in your air fryer. The loaf is full of protein, low in saturated fat, and has plenty of flavor. I use a little cottage cheese in the recipe, which gives the loaf extra creaminess and protein and keeps it moist. The small amount of feta cheese in the recipe provides a flavor boost as well as a nice bit of saltiness. The turkey loaf is low in carbohydrates and great if you're on a diabetic diet or want to "eat healthy." Leftovers reheat well and make great lunches. Enjoy!
Air Fryer Spinach and Turkey Loaf (Diabetic Friendly) -- Serves 4+
1/2 cup of chopped onion
2 cups of chopped spinach
1/2 cup of low-fat cottage cheese
1 large egg
1/2 teaspoon of garlic powder
1/2 teaspoon of oregano
1/4 teaspoon of salt
1/4 teaspoon of pepper
8-10 ounces of lean ground turkey (90-93 percent lean)
1 small crumbled whole-wheat English muffin (or a slice of whole wheat bread--about
1/2-3/4 cup of crumbs)
1/4 -1/3 cup of crumbled feta cheese (depending on how much you like it and have)
Line an 8-inch loaf pan with aluminum foil and spritz the foil with non-stick cooking spray. Put the chopped onion in a large microwave-safe bowl and microwave it with a teaspoon or so of water for about a minute to soften the onion a little. Stir in the chopped spinach (it will wilt, and that's fine). Add the cottage cheese, egg, garlic powder, oregano, salt, pepper, and ground turkey and mix everything well. Add the crumbled bread and feta and mix them into the meat mixture until combined. Pour the mixture into the loaf pan and smooth it out evenly in the pan. Spritz the top of the loaf with a little olive oil or non-stick cooking spray. Air fry the loaf at 320 degrees for 35-40 minutes or until it reaches an internal temperature of at least 165 degrees. Let the meatloaf cool a few minutes and then carefully lift it out of the pan to serve, using the aluminum foil as a sling.
