This omelet is good and so much easier than hauling out a pan and tending a large omelet on the stove. You'll only need a few minutes to whisk up the simple ingredients, and the omelet air fries in about eight minutes. The omelet comes out of the air fryer slightly puffy and a very light brown on top. You sprinkle on a little spinach and cheese and pop the omelet back in the air fryer for a couple of minutes, just to melt the cheese. Then you simply fold the omelet and sprinkle a little more cheese on top. I like cheddar cheese, but Swiss or whatever cheese you like with spinach will be fine. The omelet, of course, is great for breakfast, and it also makes a nice, light dinner. Enjoy!
Air Fryer Spinach and Cheese Rolled Omelet -- Serves 2-4
4 large eggs
1-2 teaspoons of Dijon mustard
1/4 teaspoon of onion powder
1/4 teaspoon of garlic powder
1/4 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of grated Parmesan cheese
2 tablespoons of flour (I use white whole-wheat flour)
1/3 cup of milk
1 cup of torn, fresh spinach
1/2 cup of shredded cheddar (or other) cheese
In a large bowl whisk together well the eggs, mustard, onion and garlic powders, salt, pepper, Parmesan cheese, flour, and milk. Line an 8-inch square pan with aluminum foil (bottom and up the sides) and spritz it well with non-stick cooking spray (you also can just line the bottom and an inch or two up the sides of your air fryer basket with foil and spritz the foil). Pour the omelet mixture in the pan. Air fry the omelet at 335 degrees for about 8 minutes or until the omelet is set and only slightly brown on top. Sprinkle on the spinach and half of the cheese and return the pan to the air fryer for a minute or two until the cheese melts (you don't need to turn the air fryer back on, it should still be warm enough to melt the cheese). Remove the pan from the air fryer and lift the omelet from the pan carefully using the aluminum foil as a sling. Loosen the sides of the omelet from the foil. Using the foil, fold the omelet, starting at one side, and folding over about a third of the omelet. Fold over the other side of the omelet (on top of the middle and first side) again using the foil to lift the omelet up and over. It's okay if the sides crack a bit (they probably will), as they'll be partly covered by cheese. Sprinkle the remaining cheese over the omelet and let it melt a bit. Cut the omelet into slices to serve it.
