How to Make an Easy, Inexpensive Ham, Swiss Cheese, and Cottage Cheese Bake (Diabetic Friendly, Air Fryer or Oven)

This simple casserole or "bake" is easy to make with ingredients that are readily available and economical. With plenty of vegetables, chopped ham, and cheese, the dish is great comfort food--creamy, a little salty, and cheesy. The casserole also is loaded with protein and low in "bad" carbohydrates, so, if you're on a diabetic diet, the dish is a good option (in moderation, as always!). I usually make the casserole in the air fryer in about 20 minutes, or you can bake it in a regular oven. Any leftovers reheat well in the microwave on 50 percent power. Enjoy!

Ham, Swiss Cheese, and Cottage Cheese Bake (Diabetic Friendly) -- Serves 4+


1/2 medium onion, chopped (about 1/2 cup)

1/2 cup of shredded carrot (from a bag is fine)

1/4 cup of chopped celery

1 1/2 cup of chopped ham

1 teaspoon of dried parsley flakes

1/2 teaspoon of dried dill

1/4 teaspoon of pepper

1 tablespoon of grated Parmesan cheese

1 cup of low-fat cottage cheese

2 large eggs

1/2-3/4 cup of shredded Swiss/Gruyere cheese


Spritz an 8-inch pan or casserole with non-stick cooking spray. I use a disposable aluminum foil pan placed inside a stronger pan for easy cleanup. Put the onion, carrot, celery, and a tablespoon of water in a large microwave-safe bowl and microwave them for about 3 minutes or until the vegetables soften. Stir in the ham, dried parsley, dill, Parmesan cheese, and cottage cheese. Add the eggs and stir them in until blended. Fold in the shredded Swiss cheese. Pour the mixture into the prepared pan and smooth it out evenly.

Air Fryer: Air fry the casserole at 360 degrees for 20-25 minutes or until golden and spotty brown in places. Let the casserole cool for a little before serving it.

Oven: Preheat the oven to 400 degrees. Bake the casserole for 20-25 minutes or until golden and spotty brown in places. Let the casserole cool a little before serving it.
