How to Make an Easy Apple Crumble in Your Air Fryer That Diabetics Can Eat (No Refined Sugar, No Artificial Sweeteners)

This apple crumble is easy to make and quite good as well as being nutritious. The crumble is rich in fiber and sweetened with dates and orange juice, as well as the apples, rather than being loaded with refined sugar or syrups. The topping for the crumble includes ground, toasted walnuts, which contribute more nutrition as well as a nice nutty crunch and taste. In moderation (of course!), the crumble is great if you're on a diabetic diet or want to "eat healthy," as it's less likely than many desserts to cause blood sugar spikes. The crumble cooks in the air fryer in 35-40 minutes. We like the crumble warm and, for a splurge, with small scoops of ice cream (okay, we'd like bigger scoops of ice cream, but that's not happening on my husband's diabetic diet!). Leftover crumble reheats well in the air fryer, and the crumble is also good for breakfast topped with a bit of plain Greek yogurt. Enjoy!

Easy Air Fryer Apple Crumble (Diabetic Friendly) -- Serves 4+


4 small-medium apples, peeled, cored, and sliced 1/4-1/2-inch thick

2 tablespoons of date puree (barely cover pitted dates with boiling water, let the

mixture cool, and mash the dates/water together until smooth)

4 tablespoons of orange juice

1/2 teaspoon of apple pie spice (or use a little cinnamon, nutmeg, and allspice)

1 tablespoon of butter, cut into small bits

2 teaspoons of white whole-wheat flour


Topping

1/4 cup of ground, toasted walnuts (pecans will work, too)

1 tablespoon of butter, melted

2 tablespoon of whole-wheat bread crumbs (I use part of an English muffin or slice of

whole-wheat bread, preferably a bit stale, to crumble better)

1/2 teaspoon of apple pie spice


Spritz a 4-cup or larger casserole dish with non-stick cooking spray. Add to the dish the apples, the date puree, orange juice, apple pie spice, butter, and white whole-wheat flour and mix everything together well. For the topping, in a cup or small bowl mix together all the ingredients well and sprinkle them evenly on top of the apple mixture, pressing the topping into the apples just a bit. Spritz the top of the topping with canola oil or non-stick cooking spray. Air fry the crumble at 320 degrees for 35-40 minutes or until the apples are tender when poked with a knife and the crumble is a deep brown. Let the crumble cool a little before serving it warm.
