This simple quiche is really good! It's also packed with protein and requires only two eggs. Instead of a pastry crust, minced ham and onions air fry on the bottom of the pan in about 10 minutes (and will make your kitchen smell amazing). A mixture of cottage cheese, eggs, and cheddar cheese goes on top and air fries in about 15 minutes. So you can have a great dinner or breakfast dish on the table in about half an hour. The ham and onion provide salty savoriness to the quiche, and the cottage cheese layer is soft, cheesy, and comforting. I like to make the quiche ahead of time, let it cool, cut it into squares, and stash the squares in containers in the refrigerator. I can microwave a couple of squares in two minutes at 50 percent power for a great, fast breakfast that's high in protein and calcium and low in carbohydrates. In moderation (of course!), the quiche squares are great if you're on a diabetic diet. Try pieces of quiche with a salad for an easy, economical dinner instead of take out pizza! Enjoy!

Air Fryer Crustless Cottage Cheese and Ham Quiche -- Serves 4+
1 cup of minced/finely chopped ham
1/4-1/2 cup of chopped onion (1/2 a small onion)
1 cup of low-fat cottage cheese
2 large eggs
1/2 cup of shredded medium cheddar cheese (preferably the thick-cut kind)
1/8 teaspoon of pepper
1 teaspoon of dried parsley flakes
Spritz an 8-inch pan with non-stick cooking spray or line the pan with aluminum foil and spritz the foil for easier cleanup. Combine the ham and onions in the bottom of the pan and spread them out evenly. Spritz them with olive oil or non-stick cooking spray. Air fry the ham and onions at 350 degrees for 9-10 minutes or until just a bit brown. Mix together in a medium bowl or measure the cottage cheese, eggs, cheddar cheese, pepper, and parsley spread the mixture out evenly over the ham and onion layer. Air fry the mixture at 350 for about 15 minutes or until spotty brown in places. Let the quiche cool a bit before serving it. Or let the quiche cool completely, cut it into squares, and store the squares in air-tight containers in the refrigerator to reheat later.
