How to Make Air Fryer Tilapia With a Spinach and Roasted Red Pepper Topping (Diabetic Friendly)

You can make this easy tilapia recipe in your air fryer in about 20 minutes. The fish comes out of the air fryer moist and full of flavor with a topping that includes fresh spinach and roasted red pepper strips (the kind that come in a jar are just fine). A small amount of whole-wheat breadcrumbs and Parmesan cheese top the fish and toast in the air fryer, providing crunch that contrasts nicely with the creamy spinach layer. If you'd like, you can leave off the the breadcrumbs and just use the Parmesan, but the topping won't be quite as nice and crunchy. The fish is great served with a vegetable and a simple salad. Air Fryer Tilapia With Spinach and Roasted Red Pepper Topping -- Serves 2+


1 1/2 cups of fresh spinach, chopped

2 teaspoons of minced dried onion

1/2 teaspoon of garlic powder

1/4 cup of chopped roasted red peppers (from a jar is fine)

2 tablespoons of plain Greek yogurt (fat-free is fine)

2 tablespoons of light mayonnaise

1/4 teaspoon of pepper

3 tablespoons of Parmesan cheese, divided

3/4 - 1 pound of tilapia fillets

2 tablespoons of fresh whole-wheat breadcrumbs (or other whole-grain bread crumbs)


In a medium bowl combine the spinach, dried onion, garlic powder, red peppers, yogurt, mayonnaise, pepper, and 2 tablespoons of the Parmesan. Mix everything well. Tear off a small sheet of aluminum foil to fit your air fryer basket and an inch or two up the sides. Put the foil in the basket and spritz the foil with non-stick cooking spray. Pat the fish dry with a paper towel and cut each fillet in half, vertically, using the dark center line as a guide. On the prepared foil, lay the thickest part of the fish near the sides of the air fryer basket and put the thinner pieces of fish, overlapping a little to keep them about the same thickness as the other pieces, in the middle of the foil. Divide the spinach mixture evenly among the fish pieces, spreading the filling mixture out to cover the top of each fish piece. Sprinkle the breadcrumbs over the fish/filling and then sprinkle on the remaining tablespoon of Parmesan cheese. Spritz the tops of the fish pieces with a little non-stick cooking spray or olive oil (to help hold the crumbs/cheese in place and keep them from burning). Air fry the fish at 320 degrees for about 20 minute or until the topping is a deep golden brown and the fish is done to your liking/flakes with a fork.
