These cookies are easy to put together in a quart-sized Pyrex measure, and you can make a small batch of the cookies in your air fryer in about 10 minutes. The cookies are great! Soft, full of chocolate flavor, and studded with peanut butter chips, the cookies are perfect accompaniments to a glass of milk, cup of tea or coffee, or a big dish of ice cream. The cookies aren't health food, admittedly, but they are far better for you and much better tasting than those hard cookies--the ones with strange preservatives, fats, and sugars--that you get in bags or packages from the grocery store. I like to make a batch of Chocolate Peanut Butter Chip Cookies in the afternoon so that I can have a cookie with my tea and a couple for dessert later. That means I usually end up baking about nine cookies (my husband wants some, too!). I wrap the remainder of the dough well in plastic wrap and refrigerate it so that I can have fresh, hot cookies another day. Try it! Enjoy!

Air Fryer Chocolate Peanut Butter Chip Cookies -- Makes about 15
2 tablespoons of melted butter
1/4 cup of canola oil
1/4 cup of buttermilk
3 tablespoons of baking cocoa
1/8 teaspoon of salt
1 large egg
1/3 cup of sugar
1/3 cup of dark brown sugar
1/2 teaspoon of vanilla
1 1/4 cups of flour
1/4 teaspoon of baking soda
1/4 teaspoon of baking powder
1/2 cup of peanut butter chips
1/4 cup of chocolate chips (or use 1/2 cup if you really, really like chocolate)
In a medium bowl or measure, combine the melted butter, oil, buttermilk, cocoa, salt, egg, sugars, and vanilla well. Stir in the flour, baking soda, and baking powder until combined. Fold in the peanut butter and chocolate chips. Cut pieces of baking parchment just large enough to fit your air fryer basket. Place three 1 1/2 tablespoon mounds of dough on each piece of parchment, spacing the mounds at least an inch apart. Flatten the mounds slightly with your fingers (to about an inch thick). Place one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and "air fry"/bake the cookies at 320 degrees for 8-10 minutes. Remove the cookies on their parchment to cool while you repeat the cooking process with the remaining dough. Alternatively, bake as many cookies as you'd like and stash the remaining dough, well wrapped in plastic wrap, in the refrigerator to bake another day.
