How to Make a Small Batch of Low-Sugar Toasted Almond Cookies Without Artificial Sweeteners (Diabetic Friendly)

Yes, these almond cookies are good, even without sugar or artificial or highly processed sweeteners. The cookies get their sweetness from a small amount of date puree and from the natural sweetness of the toasted almonds. The cookies are easy to make, and you can mix them up in minutes, if you toast and grind your almonds in advance. With a good amount of protein, whole-grains, "good fats," and lots of nutrients, the cookies, in moderation, are fine on a diabetic diet or for those just wanting to "eat healthy." I make the cookies in the air fryer, but you also can bake them in a regular oven at 350 degrees for 15-18 minutes, if you prefer. The cookies are nice with fruit or for a simple snack with coffee, tea, or a glass of milk. Enjoy!

Low-Sugar Toasted Almond Cookies (Diabetic Friendly) -- Makes 8-12


1/4 cup of date puree (barely cover 1/4 cup of pitted dates with boiling water, let them

cool and mash them with any water not absorbed by the dates)

1 tablespoon of milled flaxseed

1/4 cup of milk

1 teaspoon of cornstarch

1/2 teaspoon of baking powder

1/2 teaspoon of cinnamon

1/8 teaspoon of salt

1 tablespoon of canola oil

1/2 teaspoon of vanilla

3/4 cup of toasted, ground almonds (I use the kind with the skin on)

1/4 cup of quick oats


In a large bowl mix together well the date puree, milled flaxseed, milk, cornstarch, baking powder, cinnamon, salt, canola oil, and vanilla until combined. Stir in the ground almonds and oats until completely mixed into the batter. Let the mixture stand for at least 30 minutes and then stir it well again. When you're ready to make the cookies cut pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 tablespoon mounds of dough onto the parchment, leaving a couple of inches between the mounds. With damp hands, flatten out the mounds to just a little less than 1/2-inch thick. You can make crosshatch patterns with a fork on the dough, if you'd like, for decoration. Air fry the dough at 320 degrees for 10-12 minutes or until a deep golden brown and mostly set. Let the cookies cool on their parchment for a few minutes before trying to remove them.
