How to Make a Small Batch of Low Sugar Peanut Butter Biscuits or Buns (Diabetic Friendly, No Artificial Sweeteners)

This recipe makes four small biscuits or buns that are soft and full of peanut flavor. The biscuits or buns take minutes to mix up and include no processed sugar or artificial sweeteners. Instead, the biscuits/buns are sweetened with a very ripe (almost mushy) banana and some dark chocolate chips. In moderation, the biscuits or buns are great if you're on a diabetic diet or want to "eat healthy." The biscuits/buns are topped with unsalted dry roasted peanuts for extra protein and crunch. We like the biscuits/buns as a treat for suppers and breakfasts. They also would make a nice snack with a cup of tea or coffee or even a glass of milk. Enjoy!

Low Sugar Peanut Butter Biscuits or Buns (Diabetic Friendly) -- Makes 4


1/4 cup of peanut butter (the no sugar added/natural version)

1 medium very, very ripe banana, mashed

1/2 cup of white whole-wheat flour

1/2 teaspoon of baking powder

1/8 teaspoon of salt

2 tablespoons of dark chocolate chips

2 tablespoons of chopped unsalted dry roasted peanuts


In a small bowl beat the peanut butter and banana together until blended. Add to the bowl the flour, baking powder, and salt and stir them into the wet mixture until combined. Stir in the dark chocolate chips.

Air Fryer: Cut a piece of baking parchment to fit in your air fryer basket and drop four equal mounds of dough onto the parchment, spacing the dough mounds an inch or two apart. With wet hands flatten the dough mounds slightly and sprinkle each mound with about 1/2 tablespoon of the chopped peanuts, pressing the peanuts slightly into the dough. Spritz the tops of the peanut-topped dough mounds with olive oil or cooking spray. Air fry the mounds at 335 degrees for 10-13 minutes or until golden. Let the biscuits/buns cool a few minutes on their parchment before removing them.

Oven: Preheat the oven to 375 degrees. Cut a piece of baking parchment to fit a small baking sheet and drop four equal mounds of dough onto the parchment, spacing the dough mounds an inch or two apart. With wet hands flatten the dough mounds slightly and sprinkle each mound with about 1/2 tablespoon of the chopped peanuts, pressing the peanuts slightly into the dough. Bake the mounds for about 15 minutes or until golden. Let the biscuits/buns cool a few minutes on their parchment before removing them.
