How to Make a Simple, Low Sugar Plum Crisp in the Air Fryer (Diabetic Friendly)

This is a simple dessert that gets its sweetness primarily from fresh plums. The plums cook down in the air fryer and are mixed and crowned with a crunchy topping that includes a mixture of whole grains, nuts, and cinnamon. A little date puree, not refined sugar or artificial or highly processed sweeteners, provides the sweetener for the topping. The crisp is barely sweet, so the flavor of the plums really shines through--a bit sweet and a bit tart. The crisp is nutritious enough that you could eat it for breakfast, but it makes a great dessert if you're on a diabetic diet or just want to "eat healthy." Enjoy!

Low-Sugar Air Fryer Plum Crisp (Diabetic Friendly) -- Makes 1


4-5 medium pitted and sliced plums (I use firm purple or red plums)

1 teaspoon of cinnamon

1/2 cup of orange juice

1 tablespoon of butter


Topping


1 teaspoon of grated orange zest

2 tablespoons of melted butter

1/3 cup of date puree (cover pitted dates with boiling water, let them cool, and mash or

process them)

1/2 cup of chopped, toasted almonds

1 tablespoon of milled flax seeds

1/2 cup of rolled oats (old fashioned)

1/4 cup of oat flour (process oats in a food processor or blender until you get a flour)

1/2 teaspoon of vanilla

1 teaspoon of cinnamon

1/8 teaspoon of salt


Spritz a quart baking dish well with non-stick cooking spray. Arrange the plum slices in the dish and sprinkle them with the cinnamon. Heat the orange juice and butter together in a cup in the microwave for 30-45 seconds or until the butter melts and pour the mixture over the plums. Air fry the plum mixture at 320 degrees for about 20 minutes or until the plums soften. Stir the plums mid-way through. While the plums are cooking, add all the topping ingredients to a medium bowl and mix them together well. The mixture should form crumbs and clumps. After the plums have air fried for 20 minutes, pour half of topping over the plums and, with a spoon or fork, poke the topping pieces into the plums. Pour the remaining topping mixture on top of the plums and spread it out evenly. Spritz the topping mixture with a little non-stick cooking spray and air fry the crisp for another 20 minutes at 320 degrees or until the top of the crisp is a deep brown and the plums are bubbly.
