How to Make a Simple, Inexpensive, Make-Ahead Turkey Loaf in Your Air Fryer That You Can Turn Into Multiple Meals (Diabetic Friendly)

This easy turkey loaf is relatively inexpensive to make, takes minutes to mix up, and air fries in 50-60 minutes. I like to make the loaf on weekends, let it cool, and refrigerate slices of the loaf in plastic containers to turn into different meals later in the week. The loaf is mildly seasoned and moist, and it's good on its own for a simple meal with potatoes and a vegetable. The cooled loaf slices well, and the slices are great topped with mushroom gravy or barbecue sauce. I also like to put slices in the air fryer and top them with a little tomato sauce, a sprinkle of Italian seasoning, and a slice of mozzarella and/or a sprinkle of Parmesan cheese for a quick take on chicken Parmesan. The slices will reheat in the air fryer before you can boil pasta for an accompaniment. Or if you're really in a hurry, just have the "turkey loaf Parmesan" slices with a salad and a slice of crusty bread. The turkey loaf is quite low in fat and high in protein, and, with a modest amount of whole-wheat bread crumbs, the loaf is great if you're on a diabetic diet or want to "eat healthy." Enjoy!

Air Fryer Make-Ahead Turkey Loaf -- Serves 6


1/4 cup of chopped celery

1/4 cup of chopped onions

1/2 teaspoon of salt

1/4 teaspoon of pepper

1/4 teaspoon of garlic powder

1 teaspoon of poultry seasoning

1/2 cup of low-fat cottage cheese

1 large egg

1 tablespoon of grated Parmesan cheese

16 ounces of lean ground turkey (93 percent)

1/4 cup of soft whole-wheat bread crumbs (about 1/2 a whole-wheat English muffin)


Line a medium loaf pan (I use an 8- x 4-inch pan) with aluminum foil and spritz the foil with non-stick cooking spray. Put the celery and onions in a microwave-safe bowl with 2 teaspoons of water and microwave them for a couple of minutes or until they soften. Stir into the veggie mixture the salt, pepper, garlic powder, poultry seasoning, and cottage cheese. Add the egg and Parmesan cheese and mix them in well. Crumble in the ground turkey and add the whole-wheat bread crumbs and mix them in well. Transfer the turkey mixture to the loaf pan and spread it into the pan evenly. Spritz the top of the loaf with non-stick cooking spray. Air fry the turkey loaf at 320 degrees for 50-60 minutes or until an instant-read thermometer registers at least 165 degrees. You can serve the loaf warm or let it cool completely and transfer the loaf or slices of the loaf to a refrigerator container or containers to serve later.
