This skillet dinner is about as easy as it gets, and it's good! Costco sells their "Sweet Kale Chopped Salad Kit in a two-pack, and I use one for salad, and, later in the week, turn the other kit into a skillet meal. Other stores (Lidl, for example) sell similar kale salad kits, which work fine, too. The kits, in addition to kale, typically include broccoli stems or pieces, cabbage, chopped Brussels sprouts, pumpkin or other seeds, and dried cranberries. The kits also include dressing (Costco's is a poppy seed dressing), which I use to season the skillet meal. You can make the meal as simple as just the salad kit and ground turkey, which will be quite tasty! Or you can add extra ingredients for something a bit different. I like to add chopped onion, a chopped apple, sometimes nuts, and feta cheese. The dinner is quite low in fat and starchy carbohydrates, high in nutrition, and great if you're on a diabetic diet or want to "eat healthy." It's also good with quinoa on the side. Enjoy!
Ground Turkey and Sweet Kale Chopped Salad Skillet Meal -- Serves 4+
2-3 teaspoons of canola oil
1/2 medium onion, chopped
1 small/medium apple, cored and chopped
16 ounces of lean ground turkey (93 percent)
1/4 teaspoon of salt, plus extra to taste
14-ounce bag of kale chopped salad kit (Costco or other)
1/4 teaspoon of pepper or to taste
1/4 cup of crumbled feta cheese (optional but good)
Heat the oil in a non-stick skillet over medium heat. Add the onion and apple to the pan and crumble in the ground turkey. Sprinkle the turkey with the 1/4 teaspoon of salt. Cook the onion, apple, and turkey together for 10-15 minutes or until the turkey is cooked through. Add the kale mix to the skillet along with the dressing that comes in the package. You can also sprinkle in the dried cranberries and seeds that usually come with the kale mix in a separate package. Stir and cook the mixture until the kale wilts down into the turkey mixture. If you'd like, you can cover the skillet for a few minutes to get the vegetables to cook down a bit more and be less crunchy. Turn off the heat. Sprinkle on half the feta cheese and mix it in. Taste the mixture and add salt and pepper to taste. Sprinkle the remaining feta on top of the mixture and serve the meal from the skillet for quick cleanup.
