First, cooking a pork roast in your air fryer is easy. Second, the roast comes out moist, tender, and delicious--as long as you don't overcook it. Third, once you use the air fryer to cook a pork roast, you'll do it repeatedly. You need to start with a smallish roast--about two pounds (you can cut up a large roast and freeze/save the rest for later). You also need to keep the heat down. Pork is a fairly delicate meat, so low heat turns out a moister roast than high heat. You can use whatever seasoning you like, or try the spice mixture I list below. The seasoning I use is simple, quick, and good and includes a mixture of mild, not hot spices. The spices complement the mild taste of the meat. You can also season the meat, cover it with plastic, and refrigerate it to bake later in the day (this will help flavor the meat). If you do refrigerate the meat, let it come to room temperature before you cook it (or add on some cooking time). Although the roast takes only about 30 minutes to cook, make sure you include some standing/resting time before you slice and serve the meat. The standing time will let the juices draw into the meat rather than run out onto the plate. If you really can't wait--my husband couldn't, as evident in the photos--the meat will be good, nonetheless! Enjoy!
Simple Air Fryer Pork Roast -- Serves 4+
2-pound pork roast (approximately)
1-2 tablespoons of olive oil
1/2 teaspoon of salt
1/4 teaspoon of pepper
Optional spice mixture (1/2 teaspoon each of dried coriander, paprika, dried parsley flakes, onion powder, garlic powder, dried thyme, and dried rosemary)
Cut a piece of aluminum foil large enough to fit in your air fryer basket and a couple of inches up the side of the basket. Spritz the foil with non-stick cooking spray. Pat the roast dry with a paper towel. Rub the roast all over with the olive oil. Combine the spices and rub them all over the roast, into the olive oil (yes, sorry, your hands will get messy, just wash them when you're finished). Place the roast on the foil in your air fryer basket, put the basket in the air fryer, and air fry the roast at 320 degrees for about 30 minutes until a meat thermometer reads 145 degrees. Remove the roast from the air fryer basket to a plate, cover it loosely, and let it rest for 10-15 minutes (the temperature will continue to rise as the roast stands). Slice the roast thinly, crosswise, against the grain to serve it.
