Have Leftover Broccoli? Make a Quick Broccoli and Ham Frittata in Your Air Fryer

This recipe is ridiculously easy and fast as well as being quite tasty. A little leftover broccoli is the base for a small frittata--just enough for two people. I add ham to my frittata, which adds protein as well as a nice smoky, salty flavor. You can leave the ham out if you don't have any or substitute a tablespoon or two of bacon crumbles. You need only a few minutes to mix up the frittata, and it cooks in the air fryer in about 15 minutes, meaning you can have breakfast on the table quickly. Enjoy!

Air Fryer Ham and Broccoli Frittata -- Makes a 6-inch Frittata


2 large eggs

3 tablespoons of milk

1 cup of cooked broccoli, chopped

2-3 tablespoons of chopped ham

1 tablespoon of chopped green onion (optional but good)

1/2 cup of shredded cheddar or Monterey-Jack cheese

1 teaspoon of Dijon mustard

1/2 teaspoon of onion powder

1/4 teaspoon of pepper

1/4 teaspoon of salt (optional--I don't use it, because the ham is salty enough)


Spritz a 6-inch round cake pan with non-stick cooking spray. In a medium bowl or measure, whisk the eggs and milk together well with a fork. Stir in the remaining ingredients until everything is thoroughly combined. Pour/scrape the mixture into the prepared pan, put the pan in the air fryer basket, and air fry the frittata at 320 degrees for about 15 minutes or until set and a deep golden brown. Remove the frittata from the air fryer basket and let it cool in its pan for a few minutes before serving it.
