Did you receive a new air fryer for Christmas or buy one for yourself during the recent sales? You're lucky! Air fryers are great and enable you to make all sorts of things quickly, including baked goods like Honey-Nut Raisin Bran Breads. The little breads are a great post-Christmas treat. They're reasonably healthy with lots of bran, little fat, and heart-healthy walnuts in them. Plus the breads are studded with sweet, juicy raisins! The breads also are easy to make with ingredients you probably have on hand. How do they taste? They're good. Really, really good. The taste of the honey comes through and provides a unique flavor that complements rather than overwhelms the bran. Plus, the honey makes the breads smell incredible while they cook in the air fryer! You'll need 4 small loaf pans for the breads, or you can use small ramekins for muffins (about 8 muffins). The breads bake in about 20 minutes, meaning you can have warm bran bread in about half an hour, start to finish. A great trick for your new air fryer (or your old one)! One word of caution--don't be tempted to increase the temperature. The honey in the batter will darken quickly, and your bread may look burned, if you do.
Honey-Nut Raisin Bran Breads -- Makes 4 Mini Loaves
2 cups of raisin bran
3/4 cup of buttermilk
1/3 cup of canola oil
1/3 cup of honey
1 egg
2 tablespoons of sugar, plus more to sprinkle
1 cup of flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1/4 teaspoon of salt
1 teaspoon of cinnamon
1/3 cup of chopped walnuts, plus more to sprinkle (optional but good)
In a 4-quart bowl or measure, combine the raisin bran, buttermilk, oil, honey, egg, and sugar and mix them well. Set the mixture aside for about 5 minutes. While it's sitting, spray 4 small loaf pans (about 4 X 2-inches, or whatever will fit in your air fryer basket) with non-stick cooking spray. Stir together the flour, baking powder, baking soda, salt, and cinnamon and add them to the wet mixture. Stir in the 1/3 cup of walnuts. Divide the batter among the loaf pans. Sprinkle a little sugar (about 1/2 teaspoon for each loaf) atop the batter in each loaf pan and then sprinkle on some broken walnuts, if you like. Depending on the size of your air fryer, place 1-3 loaves (my air fryer accommodates 2) in the air fryer basket. Set the temperature at 300 degrees and bake the breads about 20 minutes or until deep golden and a pick inserted in the center of a loaf comes out with no wet batter attached. Let the loaves cool a few minutes in the pans before turning them out to cool completely. Repeat the cooking process with the remaining batter. Enjoy!
