Quick Sourdough Cheese, Onion, and Everything Bagel Scones (Diabetic Friendly) -- Makes 12
1 cup of white whole-wheat flour
1 tablespoon of milled flax seeds
2 teaspoons of baking powder
1/4 - 1/2 teaspoon of salt (go with the lower amount if you're watching your salt intake)
4 tablespoons of canola oil
1 cup of sourdough starter/discard (preferably cold)
4 ounces of mild cheddar cheese cubes
1/4 cup of chopped green onions
Milk to brush
Everything bagel seasoning to top (about 1/4-1/2 teaspoon per scone)
In a large bowl mix together well the flour, milled flax seeds, baking powder, and salt. Drizzle in the canola oil a tablespoon at a time, mixing it in gradually with a fork to form little crumbs. Add the sourdough starter/discard and mix it in until completely combined and a rough dough forms. Dump the dough out onto a floured surface and sprinkle on the cheddar cubes and the green onions. Knead the dough just a bit--folding and flipping the dough about six times--to incorporate the cheese cubes and onions and bring the dough together. Pat the dough out into a round about 3/4- 1-inch thick. Cut the round into 12 wedges. Brush each wedge with a little milk--about 1/2 teaspoon--and sprinkle each wedge with a little of the bagel seasoning, pressing the seasoning into the wedges a bit with your fingers.
Air Fryer: Cut pieces of baking parchment to fit your air fryer basket and put the dough wedges on the parchment, leaving at least an inch between the dough wedges. Air fry the scones at 350 degrees for about 10 minutes or until golden brown. Let the scones cool on the parchment for a few minutes before removing them.
Oven: Preheat the oven to 400 degrees. Line a baking sheet with baking parchment and place the dough wedges on the parchment, leaving at least an inch or two between the dough wedges.
