You need protein, and you need fiber. Why not get both in a savory breakfast quiche? This quiche is quick to make and bakes in about half an hour. It's loaded with protein thanks to eggs, cheese, and low-fat cottage cheese. The quiche has no crust, but it does include oatmeal, which contributes nice fiber and keeps the quiche--which is "crustless"--from becoming runny or watery. A little bacon adds salty, smokey goodness, and green onions amp up the flavor. This is a great quiche for breakfast, but it also makes a quick and easy dinner. Just add a salad and some bread, and you'll have dinner ready in less time than it would take you to pick up take-out.
Savory Bacon-Cheddar-Oatmeal Quiche -- Makes 1 quiche
1 1/2 cups of low-fat cottage cheese
3 eggs
2-4 tablespoons of cooked bacon crumbles
1/4 cup of chopped green onions
1/2 teaspoon of onion powder
1/4 teaspoon of pepper
1/2 cup of quick oats
1 1/2 cups of cheddar cheese, divided
Spritz a pie plate with non-stick cooking spray and preheat the oven to 375 degrees. In a large bowl combine the cottage cheese, eggs, bacon crumbles, green onions, onion powder, pepper and oats. Stir everything together until all the ingredients are well mixed. You can whisk them or just stir everything vigorously with a big spoon. Stir in 1 cup of the cheese and pour the mixture into the prepared pie plate. Sprinkle the remaining cheese evenly on top of the mixture. Bake the quiche about 30 minutes or until puffed a bit and a bubbly, dark golden brown. Let the quiche cool a few minutes before serving it.
