These cookies are good--soft, squishy, and not overly sweet. Studded with chopped toasted almonds and sweet-tart goji berries, the cookies are just right for a simple snack or dessert with a cup of coffee or tea or for an after-school treat with a glass of milk. The cookies are loaded with protein in the form of almond and besan (chickpea) flours, and they are sweetened with fruit, not refined sugar or artificial sweeteners. Nutritionally, the cookies are "worth eating," with their mixture of protein, "healthy" fat, fiber, and vitamins and minerals. In moderation (of course!) the cookies are great if you're on a diabetic diet or want to "eat healthy." We like the cookies because they actually taste pretty good for "healthy cookies." No, the cookies aren't decadent, but they are a great way to assuage your sweet tooth in a beneficial way! Enjoy!

Fruit-Sweetened Almond and Goji Berry Cookies -- Makes 12
1/2 cup of almond flour
1/2 cup of besan flour (chickpea flour)
1 teaspoon of baking powder
1/4 teaspoon of salt
1/2 teaspoon of cinnamon
1/4 cup of canola oil
1/2 cup of date puree (barely cover pitted dates with boiling water, let the mixture cool,
and mash or process it in a food processor or blender)
1 teaspoon of vanilla
1/4 teaspoon of almond extract
1/4 cup of milk
1/4 cup of chopped, toasted almonds
2-3 tablespoons of dried goji berries
In a large bowl mix together the almond flour, besan flour, baking powder, salt, and cinnamon. Add the oil, date puree, vanilla, almond extract, and milk to the mixture and combine all the ingredients well. Stir in the toasted almonds and goji berries until combined. Cover the mixture and let it stand for at least 30 minutes. Stir the mixture again and drop 1 1/2- 2 tablespoon scoops onto baking parchment, leaving a couple of inches between the mounds. With damp hands, flatten out the mounds to about 1/2-inch thick.
Air Fryer: Air fry the cookies at 320 degrees for 8-10 minutes or until golden and mostly set. Let the cookies cool on their parchment for a few minutes before trying to remove them.
Oven: Preheat the oven to 350 degrees. Bake the cookies for about 10 minutes or until golden and mostly set. Let the cookies cool on their parchment for a few minutes before trying to remove them.
