Five Minute Air Fryer Dinner: Use Your Leftover Chicken to Make Tex-Mex Tortillas

I recently posted a recipe for chicken thighs braised in wine and, in the post, I noted that I often use the leftover pulled chicken to make other meals. Well, this is one of those other meals! It's a simple Tex-Mex Tortilla Dinner. What that means is that you stuff the tortillas with chicken, cheese, and salsa and then top them with more salsa and cheese. The air fryer does the rest in about five minutes--plenty of time for you to make a simple salad and/or gather up some topping ingredients like green onions and sour cream. The stuffed tortillas are hot, cheesy, and delicious. Even better, you don't need to heat up the house with the regular oven, which I've been trying to avoid. Yes, the tortillas require convenience foods (tortillas and salsa) and yes they taste great! Sometimes simpler meals are better, especially on those days when you don't really want to cook. Feel free to use whatever type of salsa you prefer--hot, mild, etc.. I use Monterey-Jack cheese, but, again, use what you have and like. Enjoy!

Air Fryer Tex-Mex Tortillas -- Makes 2 Servings


2 large 10 inch tortillas, softened in the microwave for 30 seconds on medium (I used whole wheat in the photos)

2 cups of pulled or chopped cooked chicken, warmed in the microwave

2 cups of salsa (your choice--I used the jarred stuff, which is convenient and reasonably cheap)

1/2 - 1 cup of shredded Monterey-Jack cheese (or cheddar, etc.)

Toppings of your choice--sour cream, green onions, olives, chopped avocado, etc.)


Line the inside of your air fryer basket with two layers of aluminum foil. You want the foil to come only part of the way up the sides of the basket--about two inches is fine. You also want to be able, once the tortillas are cooked, to be able to lift them out of the basket using the foil as a sling (little clean up involved here!). Spritz the foil with non-stick cooking spray. Mix the chicken and one cup of salsa until combined. Sprinkle each softened tortilla with a tablespoon or two of the cheese, then place about half of the chicken mixture in the center of each tortilla. Spread the chicken mixture out a little and then top the chicken with a another tablespoon or two of the cheese. Roll up or fold each tortilla in half. Place the tortillas next to each other on the aluminum foil in the air fryer basket. Pour half of the remaining salsa on top of each tortilla and then sprinkle on the remaining cheese. Put the basket in the air fryer and air fry the tortillas at 360 degrees for about five minutes or until they are hot, bubbly, and golden. Using the foil as a sling, carefully lift the tortillas out of the air fryer basket to cool a little before you devour them. Alternatively, use a spatula to lift each tortilla out of the air fryer basket and onto a plate.
