Don't Want to Cook Dinner? Make a Quick Ground Turkey Skillet Stir Fry

Yes, we all get tired of cooking dinner. Well, most of us, anyway. For those days when you "just don't want to," try a quick ground turkey stir fry. It takes about 15 minutes--time for a pan of rice to cook--and you can make the stir fry in your skillet or chef's pan. I use a bag of broccoli slaw in the dish and a bag of "Asian Style" frozen vegetables to streamline the preparation. You can vary the veggies, if you'd like--try a bag of cole slaw, for example, instead of the broccoli slaw or use a bag of frozen broccoli or carrots in lieu of the Asian vegetables. The recipe is adaptable. I like it, though, with the broccoli slaw and mixed Asian veggies. The point is to include some vegetables as well as the ground turkey, so that you have fewer pots to wash up and still get all your vegetables for the meal. Plus, the vegetables really do make the dish taste great! I usually serve the skillet stir fry with rice and a salad. Enjoy!

Quick Ground Turkey Skillet Stir Fry -- Serves 4+


2-3 teaspoons of canola oil

16 ounces of lean ground turkey (93 percent)

1/2 teaspoon of garlic powder

12-ounce bag of broccoli slaw

12 ounce bag of "Asian Style" frozen vegetables, cooked for five minutes in the

microwave

1-2 tablespoons of minced ginger (I use the minced ginger paste that comes in a

squeeze bottle--easy!)

1/3 -1/2 cup of hoisin sauce

1-2 tablespoons of water

Salt, pepper to taste

1/2 cup of chopped cashew nuts or halves


Swirl the oil in a large skillet or chef's pan and crumble in the turkey. Turn the heat on to medium-high and partially cover the pan. Let the turkey cook a few minutes, then uncover the pan and break it up with a spatula. Stir in the garlic powder and continue to cook the turkey for about five minutes or until it is mostly done. Stir in the broccoli slaw and stir fry the mixture for a few minutes. Stir in the hoisin sauce and water. Stir in the partially cooked/hot Asian vegetables. Turn off the heat, add salt and pepper to taste, and then sprinkle on the cashew nuts. Serve the stir fry with rice or Asian-style noodles.
