Don't Know What to Cook for Dinner? Make Savory Ham Pies in Your Air Fryer

These ham pies are simple and easy enough to make on a weeknight when you're stumped for what to make for dinner. The pies also are special enough to serve to company. I use leftover ham in the pies, but you could use chopped up deli ham or a ham steak, if you prefer. To save time and hassle, I use pre-made pie crusts (the cheap kind from Lidl work fine), but feel free to make your own crusts if you'd like. The ham pies are filled, not surprisingly, with ham. The filling also benefits from grainy Dijon mustard and two types of cheese--Parmesan and Swiss--which complement the salty ham. Chopped green onions provide lots of flavor as well as nice color to the filling. The pies take minutes to mix up and cook in my air fryer in about 15 minutes. If you have leftover pies, they reheat well--with no soggy crust--in the air fryer. Enjoy!

Air Fryer Ham Pies -- Makes 4

1 1/2 cups of chopped ham

2 tablespoons of grated Parmesan cheese

1/2 cup of sour cream (light is fine)

1 tablespoon of grainy Dijon mustard

2-3 green onions, chopped

1/2 cup of shredded Swiss cheese

2 pie crusts (commercially made is fine)

1 egg

2 tablespoons of milk

In a medium bowl stir together until thoroughly mixed the ham, Parmesan, sour cream, mustard, green onions, and Swiss cheese. Cut each pie crust into four equal pieces. Divide the ham mixture into four portions, placing one portion on each of four pie crust pieces. Spread the ham mixture out so that it comes to about one-half inch from the edges of the pie crust piece. Place one of the remaining pie crust pieces on top of each of the pie crust pieces topped with ham. For each pie, seal the edges and fold the the bottom edge of the pie crust piece over the top piece. You can crimp the edges if you'd like or just mash the edges with a fork. Cut a few 1/4-1/2-inch slits in the top of each pie to allow steam to escape. Feel free to use excess pie crust pieces (if you have any) to make designs. You can be artsy/free form or not with the pies--it's up to you. Line your air fryer basket with a piece of aluminum foil (spritzed with non-stick spray) or baking parchment and place two of the ham pies on top of the foil/parchment in the basket, trying to leave a little space between the pies. In a cup or small bowl, whisk the egg and milk together with a fork and brush some of the egg mixture over the pies in the air fryer basket. Put the basket in the air fryer, set the temperature at 380 degrees and air fry the ham pies for about 15 minutes or until golden brown. Remove the pies from the basket and repeat the cooking process with the remaining unbaked pies. Let the pies cool at least five minutes before eating them.
