These cookies are simple and quick to make and are amazingly good for treats that are sort of "healthy." At least as much as cookies are. The cookies include cocoa powder for an antioxidant boost (and taste), as well as dark chocolate and walnuts. For fiber, well, the cookies have oats. So they can't be that bad, can they? Plus, the sugar and butter are kept in check. Actually, the cookies aren't "health food," but they do have nutritional value as well as taste really, really good. The cookies are crisp on the edges, soft in the middle, and have just enough chocolate and walnut chunks in them to make them addictive. So be careful. Make a small batch in your air fryer, stash the rest of the dough in your refrigerator for another day, and limit today's temptation. The cookies will be very, very, tempting. So, enjoy a few today with your tea or coffee and enjoy more cookies another day.
Air Fryer Chocolate-Oat Cookies -- Makes 12+
2 tablespoons of butter, melted
1/4 cup of canola oil
1 egg
1/4 cup of dark brown sugar
1/4 cup of sugar
1/4 teaspoon of salt
1/2 teaspoon of vanilla
2 tablespoons of cocoa powder
1/2 cup of quick oats
3/4 cup of all-purpose flour
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/2 cup of dark chocolate chunks (or chips)
1/4 cup of chopped or broken walnuts
Cut several 6-7-inch squares of baking parchment to fit in the basket of your air fryer. In a medium bowl or measure, combine the butter, oil, egg, sugars, salt, vanilla, and cocoa powder and beat them well together. Stir in the oats, flour, baking powder and baking soda until combined. Fold in the chocolate chunks and walnuts. Drop 1 1/2 tablespoons of dough onto the prepared parchment sheets, spacing the cookies as far apart as possible and no more than 3 to a sheet. Flatten the dough mounds a little with your fingers (so that the dough is about 3/4-inch thick). Place a dough-topped parchment sheet in the air fryer basket and bake the cookies at 320 degrees for 8-10 minutes or until just firm. Remove the cookies to cool completely and place another dough-topped parchment sheet in the air fryer, repeating the cooking/cooling process until you have as many cookies as you like. Stash the remaining dough in the refrigerator to bake another day (just give the cold dough a little more cooking time).
