Have Some More S'mores Cookies


My son likes marshmallows, so I decided to come up with a recipe that uses them. I found several recipes on line for s'mores cookies, but none really enthused me, as they all called for using graham cracker crumbs, which I don't generally keep on hand. Besides, graham crackers are just whole-wheat crackers with cinnamon and sugar. I should be able to make those, no? Well, maybe. It took a little trial and error, and I wanted a cookie, not a cracker. What I ultimately came up with are these little cookies, which are soft and have plenty of whole wheat and cinnamon flavor. The cookies are topped, first, with a marshmallow, which browns in the oven, then a chocolate candy kiss, which you add last. The cookies are quite good and kid as well as adult friendly. Feel free to vary the flavor of the candy kisses. I prefer the plain chocolate variety (preferably dark), but caramel flavored kisses--which are sweeter--also go well with the graham and marshmallow tastes.

S'mores Cookies

S'mores Cookies -- Makes about 24

1/4 cup of sugar

1/4 cup of brown sugar

1/4 cup of canola oil

1 egg yolk

1/2 teaspoon of vanilla

1/4 cup of low-fat milk

1 1/2 cups of white whole-wheat flour

1/4 teaspoon of salt

1 teaspoon of baking powder

1 1/2 teaspoons of cinnamon

24 large marshmallows

24 chocolate candy kisses

Preheat the oven to 350 degrees and coat cookies sheets with non-stick cooking spray or line them with parchment paper. In a large bowl, combine the sugars, oil, egg yolk, vanilla, and milk. Stir in the flour, salt, baking powder, and cinnamon until combined. Form tablespoons of dough in to balls and place them on the prepared cookie sheets about 2 inches apart. Flatten the balls a little with your hand or a glass. Bake the cookies for 5-7 minutes until just barely set. Place a marshmallow on each cookie, return the cookie sheets to the oven and set the broiler on high. Watching carefully (DO NOT WANDER OFF), broil the cookies until the marshmallows are puffy and browned--2-3 minutes. Pull the cookies from the oven and press a candy kiss in the middle of each marshmallow, squishing the kiss down a little to ensure it's stable in the marshmallow. Let the cookies cool for a few minutes before removing them from the cookie sheets to cool completely.
